  1. 1. Preheat the oven to 180 degrees Celsius with fan.
  2. 2. Add quark, 3 tablespoons of oil, salt, flour, 2 tablespoons of water, and 1 egg to a mixing bowl.
  3. 3. Mix the ingredients for 1 minute on the highest kneading setting.
  4. 4. Take the dough out and knead it briefly on a floured work surface.
  5. 5. Roll out the dough and line a greased quiche tin with a diameter of 28 cm.
  6. 6. Leave a border of about 3 cm and trim off the excess dough.
  7. 7. Prick the base several times with a fork.
  8. 8. Place the tin in the fridge while you prepare the filling.
  9. 9. Cut the cheese into small pieces.
  10. 10. Pulverize the cheese in the mixing container with the measuring cup inserted for 10 seconds on speed 8.
  11. 11. Transfer the ground cheese into a bowl.
  12. 12. Cut the leek lengthwise and remove the root end.
  13. 13. Cut the leek roughly into pieces.
  14. 14. Wash the leek thoroughly and let it drain.
  15. 15. Pulverize the leek in the mixing container for 40 seconds on speed 5.
  16. 16. Push the leek to the sides of the container with a spatula.
  17. 17. Add 2 tablespoons of oil and the bacon strips.
  18. 18. Sauté the mixture without the measuring cup in reverse mode for 10 minutes on speed 1 at 100 degrees.
  19. 19. Add sour cream, 3/4 of the cheese, 4 eggs, salt, pepper, and nutmeg to the mixing container.
  20. 20. Mix the ingredients with the measuring cup inserted for 30 seconds on speed 4.
  21. 21. Pour the egg-leek mixture onto the dough in the fridge.
  22. 22. Sprinkle the quiche with the remaining cheese.
  23. 23. Bake the quiche for about 30 to 35 minutes in the oven.
  24. 24. Carefully remove the quiche from the oven.
  25. 25. Lift it out of the tin and cut it into pieces.
  26. 26. Plate the quiche and enjoy.
