🍽️ Quiche with Green Beans and Bayonne Ham

Ingredients
- butter 125 g
- wheat flour, Type 405 250 g
- eggs 6 pcs
- salt pinch
- water 5 tbsp
- green beans 600 g
- onions, yellow 1 pcs
- oil 1 tbsp
- garlic cloves 1 pcs
- thyme, fresh 5 g
- crème fraîche 200 g
- pepper, black ground pinch
- ham from Bayonne 200 g
Instructions
- 1. Preheat the oven to 220 degrees Celsius using top and bottom heat.
- 2. Cut the cold butter into small cubes.
- 3. Place the butter cubes, flour, one egg, salt, and water into a bowl.
- 4. Knead the ingredients together by hand until you have a smooth dough.
- 5. Dust a work surface with flour and roll out the dough to a thickness of about two millimeters.
- 6. Grease a square quiche dish (approx. 32 x 12 cm).
- 7. Place the dough in the dish and form a border about three centimeters high.
- 8. Press the dough firmly against the bottom and sides of the dish.
- 9. Trim the excess dough at the edge straight with a knife.
- 10. Prick the bottom of the dough several times with a fork.
- 11. Bring about two liters of salted water to a boil in a pot.
- 12. Wash the green beans and trim off the ends.
- 13. Add the beans to the boiling salted water for about five minutes.
- 14. Drain the beans in a colander.
- 15. Rinse the beans briefly with cold water to cool them down.
- 16. Halve the onion and peel it.
- 17. Finely dice the onion.
- 18. Peel the garlic and chop it finely.
- 19. Heat oil in a pan over medium heat.
- 20. Sauté the onions and garlic for about two minutes.
- 21. Distribute the green beans evenly over the quiche base.
- 22. Distribute the sautéed onions evenly over the quiche.
- 23. Wash the thyme and shake it dry.
- 24. Strip the thyme leaves from the stems.
- 25. Finely chop the thyme leaves.
- 26. Combine the thyme, crème fraîche, and the remaining eggs in a bowl.
- 27. Season the egg mixture with salt and pepper.
- 28. Pour the egg mixture over the vegetables in the quiche.
- 29. Bake the quiche in the oven for about 30 to 35 minutes.
- 30. Place the quiche on the bottom rack while baking.
- 31. Let the quiche cool down for a short while.
- 32. Roll the Bayonne ham into small rosettes.
- 33. Garnish the quiche with the ham rosettes.
- 34. Serve the quiche and enjoy your meal!
