  1. 1. Preheat the oven to 220 degrees Celsius using top and bottom heat.
  2. 2. Cut the cold butter into small cubes.
  3. 3. Place the butter cubes, flour, one egg, salt, and water into a bowl.
  4. 4. Knead the ingredients together by hand until you have a smooth dough.
  5. 5. Dust a work surface with flour and roll out the dough to a thickness of about two millimeters.
  6. 6. Grease a square quiche dish (approx. 32 x 12 cm).
  7. 7. Place the dough in the dish and form a border about three centimeters high.
  8. 8. Press the dough firmly against the bottom and sides of the dish.
  9. 9. Trim the excess dough at the edge straight with a knife.
  10. 10. Prick the bottom of the dough several times with a fork.
  11. 11. Bring about two liters of salted water to a boil in a pot.
  12. 12. Wash the green beans and trim off the ends.
  13. 13. Add the beans to the boiling salted water for about five minutes.
  14. 14. Drain the beans in a colander.
  15. 15. Rinse the beans briefly with cold water to cool them down.
  16. 16. Halve the onion and peel it.
  17. 17. Finely dice the onion.
  18. 18. Peel the garlic and chop it finely.
  19. 19. Heat oil in a pan over medium heat.
  20. 20. Sauté the onions and garlic for about two minutes.
  21. 21. Distribute the green beans evenly over the quiche base.
  22. 22. Distribute the sautéed onions evenly over the quiche.
  23. 23. Wash the thyme and shake it dry.
  24. 24. Strip the thyme leaves from the stems.
  25. 25. Finely chop the thyme leaves.
  26. 26. Combine the thyme, crème fraîche, and the remaining eggs in a bowl.
  27. 27. Season the egg mixture with salt and pepper.
  28. 28. Pour the egg mixture over the vegetables in the quiche.
  29. 29. Bake the quiche in the oven for about 30 to 35 minutes.
