  1. 1. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  2. 2. Mix quark, oil, one teaspoon of salt, one egg, and flour in a bowl until you have a smooth dough.
  3. 3. Briefly work the dough on a floured surface.
  4. 4. Grease a square quiche pan with a side length of about 26 centimeters.
  5. 5. Place the dough in the pan and press it up the sides to form a border about 3 centimeters high.
  6. 6. Prick the bottom of the dough several times with a fork.
  7. 7. Wash the spring onions thoroughly and slice them into thin rings.
  8. 8. Peel the carrots and cut them lengthwise into two or four pieces, depending on their size.
  9. 9. Rinse the asparagus, peel the bottom third, and cut off the woody ends.
  10. 10. Wash the fennel, save the greens, halve it, and remove the core.
  11. 11. Cut the fennel bulb into thin wedges.
  12. 12. Heat butter in a large pan over medium to high heat.
  13. 13. Sauté the prepared vegetables in the pan for about 5 minutes.
  14. 14. Slice the goat cheese.
  15. 15. Place half of the cheese slices on the dough base.
  16. 16. Distribute the sautéed vegetables evenly over the cheese.
  17. 17. Wash the basil and the saved fennel greens and dry them well.
  18. 18. Finely chop the herbs.
  19. 19. Mix the chopped herbs in a bowl with crème fraîche and the remaining eggs.
  20. 20. Season the mixture with salt and pepper.
  21. 21. Pour the egg mixture evenly over the vegetables.
  22. 22. Top the quiche with the remaining cheese slices.
  23. 23. Bake the quiche on the lowest rack in the oven for about 30 to 35 minutes until golden brown.
  24. 24. Remove the quiche from the oven and let it cool briefly.
  25. 25. Cut the quiche into pieces and serve.
