🍽️ Spring Vegetable Quiche

Ingredients
- Quark 40% fat in dry matter 125 g
- Oil 2 tbsp
- Salt pinch
- Eggs 4 pcs
- Wheat flour, Type 405 280 g
- Spring onions 1 bunch
- Carrots 3 pcs
- Green asparagus 0.5 bunch
- Fennel 500 g
- Butter 1 tbsp
- Goat cheese roll 200 g
- Basil, fresh 20 g
- Creme fraiche 150 g
- Pepper, black ground pinch
Instructions
- 1. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 2. Mix quark, oil, one teaspoon of salt, one egg, and flour in a bowl until you have a smooth dough.
- 3. Briefly work the dough on a floured surface.
- 4. Grease a square quiche pan with a side length of about 26 centimeters.
- 5. Place the dough in the pan and press it up the sides to form a border about 3 centimeters high.
- 6. Prick the bottom of the dough several times with a fork.
- 7. Wash the spring onions thoroughly and slice them into thin rings.
- 8. Peel the carrots and cut them lengthwise into two or four pieces, depending on their size.
- 9. Rinse the asparagus, peel the bottom third, and cut off the woody ends.
- 10. Wash the fennel, save the greens, halve it, and remove the core.
- 11. Cut the fennel bulb into thin wedges.
- 12. Heat butter in a large pan over medium to high heat.
- 13. Sauté the prepared vegetables in the pan for about 5 minutes.
- 14. Slice the goat cheese.
- 15. Place half of the cheese slices on the dough base.
- 16. Distribute the sautéed vegetables evenly over the cheese.
- 17. Wash the basil and the saved fennel greens and dry them well.
- 18. Finely chop the herbs.
- 19. Mix the chopped herbs in a bowl with crème fraîche and the remaining eggs.
- 20. Season the mixture with salt and pepper.
- 21. Pour the egg mixture evenly over the vegetables.
- 22. Top the quiche with the remaining cheese slices.
- 23. Bake the quiche on the lowest rack in the oven for about 30 to 35 minutes until golden brown.
- 24. Remove the quiche from the oven and let it cool briefly.
- 25. Cut the quiche into pieces and serve.
