🍰 Quark-filled Yeast Pastries

Ingredients
- milk 125 ml
- yeast, fresh 20 g
- sugar 5 tbsp
- eggs 2 pcs
- spelt flour, Type 1050 250 g
- butter 50 g
- quark 20% fat in dry matter 250 g
- vanilla pudding powder 1 packet
- honey 1 tbsp
- apricot jam 3 tbsp
Instructions
- 1. Warm the milk in a pot until it is lukewarm.
- 2. Crumble the yeast into a bowl.
- 3. Add one tablespoon of sugar to the yeast.
- 4. Pour in the lukewarm milk and stir until the yeast and sugar dissolve.
- 5. Cover the bowl and let the mixture rise for ten minutes.
- 6. Separate one egg and set the egg white aside for another use.
- 7. Add flour, four tablespoons of sugar, butter, the yeast milk mixture, and the egg yolk to a large bowl.
- 8. Knead the ingredients into a smooth dough using a hand mixer with a dough hook.
- 9. Cover the dough and let it rise in a warm place for about thirty minutes.
- 10. Wait until the volume of the dough has doubled.
- 11. Whisk one egg in a separate bowl.
- 12. Stir the quark, pudding powder, and honey until smooth into the whisked egg.
- 13. Preheat the oven to 200 degrees Celsius using top and bottom heat.
- 14. Sprinkle some flour onto your work surface.
- 15. Knead the dough briefly on the floured surface again.
- 16. Divide the dough into eight equal-sized balls.
- 17. Shape flat discs with a rim from the center of each dough ball.
- 18. Ensure the discs are about eight centimeters long.
- 19. Place the discs on a baking sheet lined with baking paper.
- 20. Fill the center of each disc with the quark mixture.
- 21. Stir the jam in a small bowl.
- 22. Brush the quark pastries with the jam.
- 23. Bake the pastries in the oven for about twenty minutes until golden brown.
- 24. Remove the pastries from the oven.
- 25. Let them cool slightly.
- 26. Serve the quark pastries warm with tea or coffee.
