🍰 Quarkstollen with Apricots and Almonds

Ingredients
- butter 230 g
- sugar 200 g
- salt pinch
- vanilla sugar 40 g
- cinnamon 0.5 tsp
- eggs 2 pcs
- quark 40% fat in dry matter 250 g
- wheat flour, type 405 500 g
- baking powder 3 tsp
- dried pitted soft apricots 100 pcs
- whole almonds 100 g
- powdered sugar 2 tbsp
Instructions
- 1. Preheat the oven to 175 °C (convection). In a bowl, beat 200 g of butter until creamy, then add sugar, salt, vanilla sugar, cinnamon, and the eggs, and mix until smooth. Gently knead in the quark, flour, and baking powder.
- 2. Cut the apricots into small cubes. Work the diced apricots and almonds into the dough.
- 3. Shape the dough on a lightly floured surface into an elongated roll. Bake in the oven for about 70 minutes, covering with aluminum foil after about 45 minutes to prevent the crust from becoming too dark.
- 4. Melt 3 tbsp of butter in a small saucepan over medium heat. Remove the quark stollen with apricots and almonds from the oven and brush with the melted butter. Dust with powdered sugar and let cool. Enjoy your meal!
