  1. 1. Place the quark in a kitchen towel and let it drain well.
  2. 2. Separate the eggs and keep the yolks aside.
  3. 3. Cream the butter with powdered sugar in a bowl using a hand mixer.
  4. 4. Add breadcrumbs, the 2 egg yolks, the 2 whole eggs, and a pinch of salt.
  5. 5. Mix everything well and fold in the drained quark.
  6. 6. Let the dough rest covered in a cool place for about 30 minutes.
  7. 7. Wash the plums, halve them, and remove the pits.
  8. 8. Caramelize 3 tablespoons of sugar in a pan over low heat.
  9. 9. Deglaze the caramelized sugar with apple juice.
  10. 10. Let the mixture simmer for about 2 minutes.
  11. 11. Add the plums and cinnamon.
  12. 12. Cook the compote for about 6 minutes.
  13. 13. Bring a pot of water to a boil.
  14. 14. Add 1 tablespoon of salt and 2 tablespoons of sugar.
  15. 15. Reduce the heat to the lowest setting so that the water no longer boils.
  16. 16. Shape the dough into dumplings.
  17. 17. Place the dumplings in the hot water.
  18. 18. Let the dumplings steep for about 8 minutes.
  19. 19. Serve the quark dumplings with the plum compote in a deep plate.
  20. 20. Sprinkle the dish with powdered sugar if desired.
