🍰 Quark Dumplings with Plum Compote

Ingredients
- Quark 20 % fat in total 600 g
- Eggs 4 pcs.
- Butter 100 g
- Icing sugar 100 g
- Breadcrumbs 200 g
- Salt 1 tbsp
- Plums 800 g
- Sugar 5 tbsp
- Apple juice, cloudy 50 ml
- Cinnamon 0.25 tsp
Instructions
- 1. Place the quark in a kitchen towel and let it drain well.
- 2. Separate the eggs and keep the yolks aside.
- 3. Cream the butter with powdered sugar in a bowl using a hand mixer.
- 4. Add breadcrumbs, the 2 egg yolks, the 2 whole eggs, and a pinch of salt.
- 5. Mix everything well and fold in the drained quark.
- 6. Let the dough rest covered in a cool place for about 30 minutes.
- 7. Wash the plums, halve them, and remove the pits.
- 8. Caramelize 3 tablespoons of sugar in a pan over low heat.
- 9. Deglaze the caramelized sugar with apple juice.
- 10. Let the mixture simmer for about 2 minutes.
- 11. Add the plums and cinnamon.
- 12. Cook the compote for about 6 minutes.
- 13. Bring a pot of water to a boil.
- 14. Add 1 tablespoon of salt and 2 tablespoons of sugar.
- 15. Reduce the heat to the lowest setting so that the water no longer boils.
- 16. Shape the dough into dumplings.
- 17. Place the dumplings in the hot water.
- 18. Let the dumplings steep for about 8 minutes.
- 19. Serve the quark dumplings with the plum compote in a deep plate.
- 20. Sprinkle the dish with powdered sugar if desired.
