  1. 1. Place the quark into a clean kitchen towel.
  2. 2. Gently squeeze the quark until about 350 to 380 grams remain.
  3. 3. Separate the egg into yolk and white.
  4. 4. Add the quark, 60 grams of sugar, the egg yolk, the starch, and the vanilla sugar to a bowl.
  5. 5. Mix the ingredients well together.
  6. 6. Let the mixture rest in the refrigerator for at least 30 minutes.
  7. 7. Peel the pears and cut them into quarters.
  8. 8. Core the pears and cut them into wedges.
  9. 9. Add the pear wedges, the cranberries, the apple juice, the wine, and 3 tablespoons of sugar to a pot.
  10. 10. Bring the mixture to a boil.
  11. 11. Cook the compote for about 5 to 10 minutes.
  12. 12. The pears are ready when they are soft but still firm.
  13. 13. Remove the pears from the pot using a slotted spoon.
  14. 14. Let the liquid in the pot reduce for another 1 to 2 minutes.
  15. 15. Pour the reduced liquid over the pears.
  16. 16. Let the compote cool down.
  17. 17. Bring about 2 liters of water to a boil in a pot.
  18. 18. Lightly salt the water.
  19. 19. Form dumplings from the quark mixture using two spoons.
  20. 20. Cook the dumplings in the gently simmering water for about 10 to 15 minutes.
  21. 21. Make sure the water is not boiling vigorously.
  22. 22. Melt butter in a frying pan over medium heat.
  23. 23. Toast the breadcrumbs in the butter for about 2 minutes until golden brown.
  24. 24. Remove the quark dumplings from the water using a slotted spoon.
  25. 25. Let the dumplings drain.
  26. 26. Serve the dumplings with the pear-cranberry compote.
  27. 27. Sprinkle the dumplings with the toasted breadcrumbs.
