🍰 Quark Dumplings with Pear-Cranberry Compote

Ingredients
- Quark 40 % fat in solids 500 g
- Eggs 1 pc.
- Sugar 90 g
- Cornstarch 40 g
- Vanilla Sugar 1 tsp
- Pears 3 pc.
- Cranberries, dried 50 g
- Apple juice 75 ml
- Dry white wine 100 ml
- Salt pinch
- Butter 2 tbsp
- Breadcrumbs 4 tbsp
Instructions
- 1. Place the quark into a clean kitchen towel.
- 2. Gently squeeze the quark until about 350 to 380 grams remain.
- 3. Separate the egg into yolk and white.
- 4. Add the quark, 60 grams of sugar, the egg yolk, the starch, and the vanilla sugar to a bowl.
- 5. Mix the ingredients well together.
- 6. Let the mixture rest in the refrigerator for at least 30 minutes.
- 7. Peel the pears and cut them into quarters.
- 8. Core the pears and cut them into wedges.
- 9. Add the pear wedges, the cranberries, the apple juice, the wine, and 3 tablespoons of sugar to a pot.
- 10. Bring the mixture to a boil.
- 11. Cook the compote for about 5 to 10 minutes.
- 12. The pears are ready when they are soft but still firm.
- 13. Remove the pears from the pot using a slotted spoon.
- 14. Let the liquid in the pot reduce for another 1 to 2 minutes.
- 15. Pour the reduced liquid over the pears.
- 16. Let the compote cool down.
- 17. Bring about 2 liters of water to a boil in a pot.
- 18. Lightly salt the water.
- 19. Form dumplings from the quark mixture using two spoons.
- 20. Cook the dumplings in the gently simmering water for about 10 to 15 minutes.
- 21. Make sure the water is not boiling vigorously.
- 22. Melt butter in a frying pan over medium heat.
- 23. Toast the breadcrumbs in the butter for about 2 minutes until golden brown.
- 24. Remove the quark dumplings from the water using a slotted spoon.
- 25. Let the dumplings drain.
- 26. Serve the dumplings with the pear-cranberry compote.
- 27. Sprinkle the dumplings with the toasted breadcrumbs.
