🍰 Quark Horns with Plum Filling

Ingredients
- milk 150 ml
- yeast, fresh 30 g
- sugar 70 g
- wheat flour, type 405 500 g
- salt pinch
- quark 40% fat in dry matter 250 g
- eggs 1 pc.
- butter 50 g
- plum puree 150 g
- whipping cream 2 tbsp
Instructions
- 1. Heat the milk in a pot for about 1 minute until it is lukewarm.
- 2. Crumble the yeast into a small bowl.
- 3. Add 1 tablespoon of sugar to the yeast.
- 4. Dissolve the yeast in 100 ml of room-temperature milk.
- 5. Cover the bowl and let the mixture rest for about 15 minutes.
- 6. Mix the remaining sugar, flour, salt, quark, egg, and cut-up butter in a large bowl.
- 7. Add the yeast milk and the eggs to the dough mixture.
- 8. Knead everything into a smooth dough.
- 9. Cover the bowl with a clean kitchen towel.
- 10. Let the dough rise in a warm place for about 1 hour.
- 11. Wait until the volume of the dough has approximately doubled.
- 12. Knead the dough briefly again.
- 13. Lightly flour a work surface.
- 14. Roll the dough into a long rectangle (approx. 20 x 90 cm).
- 15. Cut about 12 sharp triangles from the dough.
- 16. Place 1 teaspoon of plum puree on the short side of each triangle.
- 17. Roll the dough from the short side over the filling.
- 18. Gently press the edges together.
- 19. Shape the horns.
- 20. Line 2 baking sheets with baking paper.
- 21. Place the horns on the sheets.
- 22. Cover the horns and let them rise for about 15 minutes.
- 23. Preheat the oven to 200 °C (convection).
- 24. Brush the horns with cream.
- 25. Bake the horns in the oven for about 20 minutes.
- 26. Let the horns cool on a cake rack.
- 27. Serve the horns.
