🍰 Quark Cream with Apricot Compote

Ingredients
- vanilla pod 1 pc.
- orange juice 500 ml
- sugar 6 tbsp
- soft dried pitted apricots 250 g
- whipping cream 300 ml
- quark 20% fat in dry matter 250 g
- sliced almonds 100 g
Instructions
- 1. Slice the vanilla pod lengthwise down the middle.
- 2. Scrape out the vanilla seeds using the back of a knife.
- 3. Pour the orange juice into a pot and bring it to a boil on the highest setting.
- 4. Add the vanilla seeds and one tablespoon of sugar to the pot.
- 5. Let the mixture reduce for about two minutes.
- 6. Add the apricots to the orange juice.
- 7. Simmer the compote for about five minutes on a low setting.
- 8. Pour 200 milliliters of cream into a tall container.
- 9. Whip the cream until stiff.
- 10. Place the quark and two tablespoons of sugar into a bowl.
- 11. Stir the quark and sugar together.
- 12. Gently fold the whipped cream into the quark mixture.
- 13. Place three tablespoons of sugar into a frying pan.
- 14. Melt the sugar on a medium setting for about two minutes.
- 15. Toss the slivered almonds in the melted sugar.
- 16. Deglaze the almonds with 100 milliliters of cream.
- 17. Bring the mixture to a boil while stirring.
- 18. Continue stirring until the caramel has completely dissolved.
- 19. Place the apricot compote into the serving bowl.
- 20. Serve the compote together with the quark cream and the caramelized almonds.
