  1. 1. Slice the vanilla pod lengthwise down the middle.
  2. 2. Scrape out the vanilla seeds using the back of a knife.
  3. 3. Pour the orange juice into a pot and bring it to a boil on the highest setting.
  4. 4. Add the vanilla seeds and one tablespoon of sugar to the pot.
  5. 5. Let the mixture reduce for about two minutes.
  6. 6. Add the apricots to the orange juice.
  7. 7. Simmer the compote for about five minutes on a low setting.
  8. 8. Pour 200 milliliters of cream into a tall container.
  9. 9. Whip the cream until stiff.
  10. 10. Place the quark and two tablespoons of sugar into a bowl.
  11. 11. Stir the quark and sugar together.
  12. 12. Gently fold the whipped cream into the quark mixture.
  13. 13. Place three tablespoons of sugar into a frying pan.
  14. 14. Melt the sugar on a medium setting for about two minutes.
  15. 15. Toss the slivered almonds in the melted sugar.
  16. 16. Deglaze the almonds with 100 milliliters of cream.
  17. 17. Bring the mixture to a boil while stirring.
  18. 18. Continue stirring until the caramel has completely dissolved.
  19. 19. Place the apricot compote into the serving bowl.
  20. 20. Serve the compote together with the quark cream and the caramelized almonds.
