🍰 Quark Soufflé with Marinated Fruits

Ingredients
- Eggs 2 pcs.
- sugar 3 tbsp.
- quark 40% fat in total 100 g
- cornstarch 1 tbsp.
- butter 1 tsp.
- pineapple 0.25 pcs.
- strawberries 250 g
- apple sauce 1 tbsp.
Instructions
- 1. Preheat the oven to 180 °C (top/bottom heat). Separate the eggs. In a bowl, mix the egg yolks with the quark and 1 heaped tbsp. of cornstarch.
- 2. Whip the egg whites in a separate bowl until stiff, gradually sprinkling in 2 tbsp. of sugar. Then gently fold the egg whites into the quark mixture.
- 3. Grease 4 soufflé molds (each approx. 150 ml) and dust them with 1 tbsp. of sugar. Divide the soufflé mixture evenly among the molds. Place a baking sheet or ovenproof pan with 1-2 cm of hot water in the oven, set the molds inside, and bake in a water bath for about 25–30 minutes.
- 4. Meanwhile, peel the pineapple, quarter it, remove the core, and dice the flesh. Wash the strawberries, remove the stems, and quarter them. Mix both in a bowl with apple sauce. Serve the quark soufflé with the marinated fruits. Enjoy your meal!
