🍰 Quark Potato Patties with Plum Compote

Ingredients
- Raisins 60 g
- white rum 2 tbsp
- plums 500 g
- sugar 100 g
- cinnamon 0.25 tsp
- dry red wine 100 ml
- cornstarch 1 tsp
- lemons 1 pcs
- potatoes, mostly waxy 500 g
- salt pinch
- quark 40 % fat in total 500 g
- eggs 2 pcs
- wheat flour, Type 405 125 g
- oil 4 tbsp
- powdered sugar 1 tbsp
Instructions
- 1. Soak the raisins in rum.
- 2. Wash the plums and cut them into quarters.
- 3. Remove the pits from the plums.
- 4. Place the plums, 30 grams of sugar, cinnamon, and red wine in a pot.
- 5. Bring the mixture to a boil.
- 6. Simmer the compote for about 5 minutes until the plums are soft.
- 7. Mix the starch smoothly with a little water.
- 8. Add the mixed starch to the compote.
- 9. Bring the compote to a boil once.
- 10. Let the compote cool down.
- 11. Rinse the lemon under hot water.
- 12. Grate about 1 teaspoon of lemon zest finely.
- 13. Wash the potatoes.
- 14. Place the potatoes in a pot with salted water.
- 15. Bring the water to a boil.
- 16. Cook the potatoes covered at medium heat for about 25 minutes.
- 17. Check if the potatoes are soft.
- 18. Drain the potatoes.
- 19. Rinse the potatoes with cold water.
- 20. Peel the potatoes.
- 21. Mash the potatoes in the pot with a potato masher.
- 22. Add the quark to the potatoes.
- 23. Add the remaining sugar to the mixture.
- 24. Add the lemon zest to the mixture.
- 25. Add the soaked raisins to the mixture.
- 26. Add the eggs to the mixture.
- 27. Mix everything well.
- 28. Fold in enough flour until a loose but moldable dough forms.
- 29. Lightly moisten your hands.
- 30. Shape 20 to 24 round patties.
- 31. The patties should be finger-thick.
- 32. Heat oil in a pan.
- 33. Fry the quark potato patties in batches at high heat.
- 34. Fry the patties for about 5 minutes on each side.
- 35. Let the patties drain on kitchen paper.
- 36. Dust the patties with powdered sugar.
- 37. Serve the patties with the plum compote.
