🍽️ Turkey Steaks with Kohlrabi Fries and Homemade Ketchup

Ingredients
- kohlrabi 3 pcs
- salt pinch
- pepper, black ground pinch
- shallots 2 pcs
- thyme, fresh 10 g
- oil 3 tbsp
- tomato paste 1 tbsp
- tomatoes, pureed 425 g
- turkey breast fillet 600 g
- honey 2 tbsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Wash the kohlrabi thoroughly and peel it.
- 3. Remove any woody parts from the kohlrabi.
- 4. Cut the kohlrabi into slices about 1 cm thick.
- 5. Cut the slices further into sticks about 1 cm thick.
- 6. Place the kohlrabi sticks in a bowl.
- 7. Season them with two pinches each of salt and pepper.
- 8. Mix everything well until the sticks are seasoned.
- 9. Place the kohlrabi fries on a baking sheet.
- 10. Bake them in the oven for about 20 to 25 minutes.
- 11. Halve the shallots and peel them.
- 12. Cut the shallots into thin strips.
- 13. Wash the thyme and pat it dry.
- 14. Pluck the thyme leaves from the stems.
- 15. Chop the thyme leaves roughly.
- 16. Heat 1 tablespoon of oil in a pot over medium heat.
- 17. Add the shallots and tomato paste to the pot.
- 18. Roast the mixture for about 3 minutes.
- 19. Add the pureed tomatoes and the thyme.
- 20. Season the sauce with salt and pepper.
- 21. Let the sauce simmer covered over low heat.
- 22. Simmer the sauce for about 10 to 12 minutes.
- 23. Heat 2 tablespoons of oil in a pan over high heat.
- 24. Wash the turkey and pat it dry.
- 25. Salt the turkey steaks.
- 26. Fry the turkey steaks in the hot oil.
- 27. Fry them for about 3 minutes on each side.
- 28. Pepper the turkey steaks after frying.
- 29. Place the turkey steaks in the oven for the rest of the cooking time.
- 30. Puree the ketchup in the pot.
- 31. Season the ketchup with salt, pepper, and honey.
- 32. Take the kohlrabi fries out of the oven.
- 33. Plate the kohlrabi fries.
- 34. Place the turkey steaks on the plates.
- 35. Serve the ketchup in small bowls.
- 36. Serve the turkey steaks and kohlrabi fries with the ketchup.
