🍽️ Crispy Turkey Steaks with Oven Potato Wedges and Fresh Carrot-Apple Curd

Ingredients
- Turkey breast fillet 600 g
- Potatoes, mostly waxy 1 kg
- Oil 3 tbsp
- Salt 1 tbsp
- Pepper, black ground pinch
- Lemons 1 pc.
- Carrots 4 pcs.
- Apples, red 1 pc.
- Quark 40% fat in dry matter 250 g
- Honey 1 tsp
Instructions
- 1. Preheat your oven to 220 degrees Celsius with fan setting.
- 2. Take the meat out of the fridge and let it reach room temperature for a moment.
- 3. Wash the potatoes thoroughly under running water.
- 4. Cut the potatoes into thick wedges.
- 5. Place the potato wedges into a large bowl.
- 6. Add two tablespoons of oil, salt, and pepper.
- 7. Mix everything well so the potatoes are evenly coated.
- 8. Place the potatoes on a baking sheet lined with baking paper.
- 9. Slide the tray into the oven and bake the wedges for about 25 minutes.
- 10. Set the bowl aside and clean it out.
- 11. Rinse the lemon under hot water.
- 12. Grate about one teaspoon of the green lemon zest.
- 13. Squeeze the juice out of the lemon.
- 14. Peel the carrots.
- 15. Cut off the tough bottom ends of the carrots.
- 16. Coarsely grate the carrots into the clean bowl.
- 17. Wash the apple and cut it into quarters.
- 18. Remove the hard core from the apple quarters.
- 19. Coarsely grate the apple flesh into the bowl with the carrots.
- 20. Add the curd cheese to the carrot-apple mixture.
- 21. Add one tablespoon of lemon juice.
- 22. Add the grated lemon zest.
- 23. Season the curd mixture with salt and pepper.
- 24. Add a small pinch of sugar.
- 25. Mix all ingredients for the curd well together.
- 26. Rinse the turkey steaks under cold water.
- 27. Pat the meat dry with a kitchen towel.
- 28. Halve the turkey steaks in the middle.
- 29. Salt both sides of the meat.
- 30. Heat one tablespoon of oil in a large pan.
- 31. Set the heat to medium-high.
- 32. Fry the turkey steaks for about three to four minutes on each side.
- 33. The meat should turn golden brown.
- 34. Add a dollop of honey to the pan shortly before the end of the cooking time.
- 35. Turn the steaks in the honey so they are coated all around.
- 36. Deglaze the pan with one tablespoon of lemon juice.
- 37. Season the steaks finally with black pepper.
- 38. Take the finished potato wedges out of the oven.
- 39. Place the turkey steaks on the plates.
- 40. Add the potato wedges.
- 41. Add a scoop of the carrot-apple curd.
- 42. Serve the dish immediately and enjoy it.
