  1. 1. Preheat your oven to 220 degrees Celsius with fan setting.
  2. 2. Take the meat out of the fridge and let it reach room temperature for a moment.
  3. 3. Wash the potatoes thoroughly under running water.
  4. 4. Cut the potatoes into thick wedges.
  5. 5. Place the potato wedges into a large bowl.
  6. 6. Add two tablespoons of oil, salt, and pepper.
  7. 7. Mix everything well so the potatoes are evenly coated.
  8. 8. Place the potatoes on a baking sheet lined with baking paper.
  9. 9. Slide the tray into the oven and bake the wedges for about 25 minutes.
  10. 10. Set the bowl aside and clean it out.
  11. 11. Rinse the lemon under hot water.
  12. 12. Grate about one teaspoon of the green lemon zest.
  13. 13. Squeeze the juice out of the lemon.
  14. 14. Peel the carrots.
  15. 15. Cut off the tough bottom ends of the carrots.
  16. 16. Coarsely grate the carrots into the clean bowl.
  17. 17. Wash the apple and cut it into quarters.
  18. 18. Remove the hard core from the apple quarters.
  19. 19. Coarsely grate the apple flesh into the bowl with the carrots.
  20. 20. Add the curd cheese to the carrot-apple mixture.
  21. 21. Add one tablespoon of lemon juice.
  22. 22. Add the grated lemon zest.
  23. 23. Season the curd mixture with salt and pepper.
  24. 24. Add a small pinch of sugar.
  25. 25. Mix all ingredients for the curd well together.
  26. 26. Rinse the turkey steaks under cold water.
  27. 27. Pat the meat dry with a kitchen towel.
  28. 28. Halve the turkey steaks in the middle.
  29. 29. Salt both sides of the meat.
  30. 30. Heat one tablespoon of oil in a large pan.
  31. 31. Set the heat to medium-high.
  32. 32. Fry the turkey steaks for about three to four minutes on each side.
  33. 33. The meat should turn golden brown.
  34. 34. Add a dollop of honey to the pan shortly before the end of the cooking time.
  35. 35. Turn the steaks in the honey so they are coated all around.
  36. 36. Deglaze the pan with one tablespoon of lemon juice.
  37. 37. Season the steaks finally with black pepper.
  38. 38. Take the finished potato wedges out of the oven.
  39. 39. Place the turkey steaks on the plates.
  40. 40. Add the potato wedges.
  41. 41. Add a scoop of the carrot-apple curd.
  42. 42. Serve the dish immediately and enjoy it.
