🍽️ Crispy Turkey Steaks with Oven Potato Wedges and Fresh Herb Quark

Ingredients
- Turkey breast fillet 600 g
- Potatoes, mainly waxy 800 g
- Oil 2 tbsp
- Salt 1 tbsp
- Pepper, black ground 1 tsp
- Lemons 1 pc.
- Cucumbers 2 pc.
- Dill, fresh 10 g
- Chives, fresh 20 g
- Quark 20% fat in trace 250 g
- Sunflower seeds 20 g
- Olive oil 1 tbsp
Instructions
- 1. Preheat the oven to 220 degrees Celsius with fan setting.
- 2. Take the turkey steaks out of the fridge to let them reach room temperature.
- 3. Wash the potatoes thoroughly and cut them into wide wedges.
- 4. Toss the potato wedges in a bowl with one tablespoon of oil, salt, and pepper.
- 5. Place the potatoes on a baking sheet.
- 6. Bake the potato wedges in the oven for about 25 minutes.
- 7. Rinse out the used bowl afterwards.
- 8. Wash the lemon under hot water and dry it.
- 9. Grate about one tablespoon of lemon zest.
- 10. Cut the lemon in half and squeeze out the juice.
- 11. Wash the cucumber and grate it into the clean bowl.
- 12. Rinse the dill and chives and shake them dry.
- 13. Pluck off the fine dill tips and chop them finely.
- 14. Cut the chives into fine rings.
- 15. Mix the herbs with one teaspoon of lemon juice and the lemon zest.
- 16. Add the quark, sunflower seeds, and one tablespoon of olive oil to the cucumber mixture.
- 17. Season the quark with salt and pepper and mix everything well.
- 18. Rinse the turkey steaks and pat them dry with a kitchen towel.
- 19. Halve the turkey steaks and season them with salt.
- 20. Heat one tablespoon of oil in a pan over medium to high heat.
- 21. Fry the turkey steaks for about three to four minutes on each side until golden brown.
- 22. Swirl the pan and deglaze the steaks with the remaining lemon juice.
- 23. Finally season the turkey steaks with pepper.
- 24. Take the potato wedges out of the oven.
- 25. Plate the turkey steaks together with the potato wedges and the herb quark.
- 26. Serve the dish and enjoy.
