  1. 1. Preheat the oven to 220 degrees Celsius with fan setting.
  2. 2. Take the turkey steaks out of the fridge to let them reach room temperature.
  3. 3. Wash the potatoes thoroughly and cut them into wide wedges.
  4. 4. Toss the potato wedges in a bowl with one tablespoon of oil, salt, and pepper.
  5. 5. Place the potatoes on a baking sheet.
  6. 6. Bake the potato wedges in the oven for about 25 minutes.
  7. 7. Rinse out the used bowl afterwards.
  8. 8. Wash the lemon under hot water and dry it.
  9. 9. Grate about one tablespoon of lemon zest.
  10. 10. Cut the lemon in half and squeeze out the juice.
  11. 11. Wash the cucumber and grate it into the clean bowl.
  12. 12. Rinse the dill and chives and shake them dry.
  13. 13. Pluck off the fine dill tips and chop them finely.
  14. 14. Cut the chives into fine rings.
  15. 15. Mix the herbs with one teaspoon of lemon juice and the lemon zest.
  16. 16. Add the quark, sunflower seeds, and one tablespoon of olive oil to the cucumber mixture.
  17. 17. Season the quark with salt and pepper and mix everything well.
  18. 18. Rinse the turkey steaks and pat them dry with a kitchen towel.
  19. 19. Halve the turkey steaks and season them with salt.
  20. 20. Heat one tablespoon of oil in a pan over medium to high heat.
  21. 21. Fry the turkey steaks for about three to four minutes on each side until golden brown.
  22. 22. Swirl the pan and deglaze the steaks with the remaining lemon juice.
  23. 23. Finally season the turkey steaks with pepper.
  24. 24. Take the potato wedges out of the oven.
  25. 25. Plate the turkey steaks together with the potato wedges and the herb quark.
  26. 26. Serve the dish and enjoy.
