🍽️ Crispy Turkey Schnitzels on Caramelized Sauerkraut with Kumquats

Ingredients
- Sauerkraut 400 g
- Kumquats 100 g
- Onions, yellow 2 pcs
- Butter 3 tbsp
- Brown sugar 2 tbsp
- Orange juice 100 ml
- Vegetable broth 150 ml
- Salt pinch
- Pepper, black ground pinch
- Turkey breast schnitzels 600 g
- Wheat flour, Type 405 2 tbsp
- Eggs 2 pcs
- Breadcrumbs 4 tbsp
Instructions
- 1. Place the sauerkraut in a colander and rinse it thoroughly under running water. Let it drain well afterwards.
- 2. Pour boiling water over the kumquats and let them steep for about 1 minute. Drain the water.
- 3. Repeat the process with boiling water a second time.
- 4. Rinse the kumquats under cold water, slice them into thin rounds, and remove the seeds.
- 5. Halve the onions, peel them, and cut them into small cubes.
- 6. Heat 1 tablespoon of butter in a pan.
- 7. Sauté the onion cubes in it for about 1 minute until they are translucent.
- 8. Add the kumquat slices to the pan and sprinkle them with sugar.
- 9. Caramelize the fruits for about 2 minutes.
- 10. Deglaze the pan with orange juice and broth.
- 11. Add the drained sauerkraut and season it with salt and pepper.
- 12. Let the mixture simmer covered for approx. 20 minutes until the sauerkraut is soft.
- 13. Rinse the turkey schnitzels and pat them dry with kitchen paper.
- 14. Place the schnitzels between two sheets of cling film and pound them slightly flat with a meat mallet.
- 15. Fill a plate with flour.
- 16. Whisk the eggs in a second bowl.
- 17. Put the breadcrumbs in a third bowl.
- 18. Season the schnitzels with salt and pepper.
- 19. Roll the schnitzels one by one first in the flour, then in the egg mixture, and finally in the breadcrumbs.
- 20. Press the breading onto the schnitzels slightly.
- 21. Heat 2 tablespoons of butter in a frying pan.
- 22. Fry the schnitzels for about 3 minutes on each side until golden brown.
- 23. Let the finished schnitzels drain on kitchen paper.
- 24. Serve the turkey schnitzels together with the warm kumquat sauerkraut.
