  1. 1. Place the sauerkraut in a colander and rinse it thoroughly under running water. Let it drain well afterwards.
  2. 2. Pour boiling water over the kumquats and let them steep for about 1 minute. Drain the water.
  3. 3. Repeat the process with boiling water a second time.
  4. 4. Rinse the kumquats under cold water, slice them into thin rounds, and remove the seeds.
  5. 5. Halve the onions, peel them, and cut them into small cubes.
  6. 6. Heat 1 tablespoon of butter in a pan.
  7. 7. Sauté the onion cubes in it for about 1 minute until they are translucent.
  8. 8. Add the kumquat slices to the pan and sprinkle them with sugar.
  9. 9. Caramelize the fruits for about 2 minutes.
  10. 10. Deglaze the pan with orange juice and broth.
  11. 11. Add the drained sauerkraut and season it with salt and pepper.
  12. 12. Let the mixture simmer covered for approx. 20 minutes until the sauerkraut is soft.
  13. 13. Rinse the turkey schnitzels and pat them dry with kitchen paper.
  14. 14. Place the schnitzels between two sheets of cling film and pound them slightly flat with a meat mallet.
  15. 15. Fill a plate with flour.
  16. 16. Whisk the eggs in a second bowl.
  17. 17. Put the breadcrumbs in a third bowl.
  18. 18. Season the schnitzels with salt and pepper.
  19. 19. Roll the schnitzels one by one first in the flour, then in the egg mixture, and finally in the breadcrumbs.
  20. 20. Press the breading onto the schnitzels slightly.
  21. 21. Heat 2 tablespoons of butter in a frying pan.
  22. 22. Fry the schnitzels for about 3 minutes on each side until golden brown.
  23. 23. Let the finished schnitzels drain on kitchen paper.
  24. 24. Serve the turkey schnitzels together with the warm kumquat sauerkraut.
