🍽️ Crispy Turkey Breast Strips with Cornflake Crust from the Air Fryer

Ingredients
- Savoy cabbage 500 g
- Carrots 250 g
- Dill, fresh 10 g
- White wine vinegar 3 tbsp
- Salt pinch
- Rapeseed oil 3 tbsp
- Sugar 1 tsp
- Pepper, black ground pinch
- Turkey breast fillet 800 g
- Cornflakes 150 g
- Eggs 2 pcs
- Wheat flour, Type 405 40 g
- Paprika, sweet ground pinch
- Ketchup 6 tbsp
Instructions
- 1. Wash the pointed cabbage thoroughly and remove the hard core in the center.
- 2. Cut the cabbage leaves into very fine strips.
- 3. Peel the carrots and wash them as well.
- 4. Cut the carrots into thin strips.
- 5. Wash the dill and shake it dry.
- 6. Pluck the dill into small sprigs.
- 7. Put the vegetable strips of cabbage and carrots into a bowl.
- 8. Pour vinegar and a pinch of salt over the vegetables.
- 9. Knead the ingredients briefly with your hands to dissolve the salt.
- 10. Add oil, sugar, pepper, and the dill sprigs to the salad.
- 11. Let the salad marinate briefly so the flavors can infuse.
- 12. Rinse the turkey breast pieces under running water.
- 13. Pat the meat dry with kitchen paper.
- 14. Cut the turkey breast crosswise into slices about 2 centimeters wide.
- 15. Crumble the cornflakes finely with your hands.
- 16. Put the crumbled cornflakes into a deep plate.
- 17. Put the flour into a second deep plate.
- 18. Beat the eggs into a third deep plate and whisk them.
- 19. Season the meat slices with salt, pepper, and paprika powder.
- 20. Coat each piece of meat in the flour first.
- 21. Then dip the floured meat into the beaten eggs.
- 22. Finally, press the meat firmly into the cornflakes.
- 23. Fill the air fryer basket with a quarter of the meat pieces.
- 24. Preheat the air fryer to 170 degrees Celsius.
- 25. Cook the meat pieces for 5 minutes at 170 degrees Celsius.
- 26. Turn the meat pieces around after half the time.
- 27. Finish cooking at the same temperature for another 5 minutes.
- 28. Repeat the process with the remaining meat pieces.
- 29. Finally, season the salad with salt to taste.
- 30. Plate the crispy turkey breast strips.
- 31. Serve them together with the salad and ketchup.
