🍽️ Oven Turkey Breast with Parsley Bulgur and Garlic Spinach

Ingredients
- bell pepper, yellow 2 pcs.
- parsley, fresh 30 g
- vegetable broth 750 ml
- oil 4 tbsp
- bulgur 300 g
- turkey breast fillet 600 g
- salt pinch
- pepper, black ground pinch
- garlic cloves 1 pcs.
- leaf spinach 600 g
- sugar pinch
- curry powder pinch
Instructions
- 1. Preheat the oven to 150 degrees Celsius with fan setting.
- 2. Wash the bell peppers thoroughly.
- 3. Remove the stem and seeds from the bell peppers.
- 4. Cut the pepper flesh into approx. 1 cm cubes.
- 5. Wash the parsley and shake it dry.
- 6. Pick the parsley leaves off the stems.
- 7. Finely chop the parsley leaves.
- 8. Bring the broth to a boil in a pot.
- 9. Heat 1 tablespoon of oil in a pan over high heat.
- 10. Sauté the pepper cubes for about 2 minutes.
- 11. Remove the peppers from the pan and set them aside.
- 12. Clean the pan thoroughly.
- 13. Add the bulgur to the boiling broth.
- 14. Simmer the bulgur covered for about 5 minutes over medium heat.
- 15. Remove the pot from the heat.
- 16. Let the bulgur swell covered for another approx. 10 minutes.
- 17. Rinse the turkey breast.
- 18. Pat the turkey dry with kitchen paper.
- 19. Season the turkey with salt.
- 20. Heat 2 tablespoons of oil in the pan over high heat.
- 21. Sear the turkey in the hot oil for approx. 2 minutes on each side.
- 22. Season the turkey with pepper afterwards.
- 23. Line a baking tray with baking paper.
- 24. Place the turkey on the tray.
- 25. Put the turkey in the oven for approx. 8 minutes.
- 26. Peel the garlic.
- 27. Finely chop the garlic.
- 28. Wash the spinach.
- 29. Spin the spinach dry.
- 30. Add 1 tablespoon of oil to the pan drippings.
- 31. Heat the oil over medium heat.
- 32. Add the garlic to the pan.
- 33. Add the spinach gradually to the pan.
- 34. Let the spinach wilt in the pan.
- 35. Season the spinach with salt.
- 36. Season the spinach with pepper.
- 37. Season the spinach with sugar.
- 38. Mix the pepper cubes into the bulgur.
- 39. Mix the parsley into the bulgur.
- 40. Taste the bulgur and adjust with salt.
- 41. Taste the bulgur and adjust with pepper.
- 42. Taste the bulgur and adjust with curry.
- 43. Remove the turkey from the oven.
- 44. Plate the turkey.
- 45. Serve the bulgur on the plates.
- 46. Serve the garlic spinach on the plates.
- 47. Serve the dish.
