  1. 1. Peel the grapefruits completely with a sharp knife. Remove the white pith as well.
  2. 2. Carefully cut the fruit segments out of the membranes. Use V-shaped cuts for this.
  3. 3. Catch the released juice in a bowl.
  4. 4. Bring about 1 liter of salted water to a boil in a pot.
  5. 5. Heat approximately 300 ml of broth in a separate pot.
  6. 6. Season the yogurt in a bowl with salt, pepper, and honey.
  7. 7. Rinse the turkey meat and pat it dry.
  8. 8. Season the meat with salt.
  9. 9. Heat 1 tablespoon of oil in a pan over high heat.
  10. 10. Fry the turkey for about 3 minutes on both sides.
  11. 11. Then season the meat with pepper.
  12. 12. Reduce the heat so the meat can continue cooking.
  13. 13. Turn the meat occasionally while cooking.
  14. 14. Add the couscous to the hot broth.
  15. 15. Remove the pot from the heat.
  16. 16. Let the couscous swell for about 10 minutes.
  17. 17. Rinse the beans.
  18. 18. Trim the ends of the beans.
  19. 19. Cook the beans in the boiling salted water for about 8 to 10 minutes.
  20. 20. Wash the rosemary.
  21. 21. Shake the rosemary dry.
  22. 22. Strip the needles from the stems.
  23. 23. Chop the rosemary needles finely.
  24. 24. Add the chopped rosemary to the couscous.
  25. 25. Add 1 tablespoon of olive oil to the couscous.
  26. 26. Season the couscous with salt and pepper.
  27. 27. Add the grapefruit segments to the meat in the pan.
  28. 28. Heat the grapefruit for about 1 minute over medium to high heat.
  29. 29. Drain the beans.
  30. 30. Season the beans with salt.
  31. 31. Plate the couscous and beans.
  32. 32. Place the turkey and grapefruit segments on top.
  33. 33. Drizzle the yogurt over it.
  34. 34. Serve the dish and enjoy your meal!
