🍽️ Tender Turkey Breast with Grapefruit, Rosemary Couscous, and Beans

Ingredients
- Grapefruit 2 pcs.
- Salt Pinch
- Vegetable broth 300 ml
- Yogurt, plain 150 g
- Pepper, black ground Pinch
- Honey 1 tsp
- Turkey breast fillet 600 g
- Oil 1 tbsp
- couscous 200 g
- Green beans 400 g
- Rosemary, fresh 10 g
- Olive oil 1 tbsp
Instructions
- 1. Peel the grapefruits completely with a sharp knife. Remove the white pith as well.
- 2. Carefully cut the fruit segments out of the membranes. Use V-shaped cuts for this.
- 3. Catch the released juice in a bowl.
- 4. Bring about 1 liter of salted water to a boil in a pot.
- 5. Heat approximately 300 ml of broth in a separate pot.
- 6. Season the yogurt in a bowl with salt, pepper, and honey.
- 7. Rinse the turkey meat and pat it dry.
- 8. Season the meat with salt.
- 9. Heat 1 tablespoon of oil in a pan over high heat.
- 10. Fry the turkey for about 3 minutes on both sides.
- 11. Then season the meat with pepper.
- 12. Reduce the heat so the meat can continue cooking.
- 13. Turn the meat occasionally while cooking.
- 14. Add the couscous to the hot broth.
- 15. Remove the pot from the heat.
- 16. Let the couscous swell for about 10 minutes.
- 17. Rinse the beans.
- 18. Trim the ends of the beans.
- 19. Cook the beans in the boiling salted water for about 8 to 10 minutes.
- 20. Wash the rosemary.
- 21. Shake the rosemary dry.
- 22. Strip the needles from the stems.
- 23. Chop the rosemary needles finely.
- 24. Add the chopped rosemary to the couscous.
- 25. Add 1 tablespoon of olive oil to the couscous.
- 26. Season the couscous with salt and pepper.
- 27. Add the grapefruit segments to the meat in the pan.
- 28. Heat the grapefruit for about 1 minute over medium to high heat.
- 29. Drain the beans.
- 30. Season the beans with salt.
- 31. Plate the couscous and beans.
- 32. Place the turkey and grapefruit segments on top.
- 33. Drizzle the yogurt over it.
- 34. Serve the dish and enjoy your meal!
