🍽️ Turkey Steaks with Tomato Ragout and Rice

Ingredients
- Salt pinch
- Turkey breast fillet 600 g
- Thyme, fresh 10 g
- Green beans 600 g
- Garlic cloves 1 pc.
- Butter 6 tbsp
- Breadcrumbs 50 g
- Long-grain rice 300 g
- Cherry tomatoes 500 g
- Onions, red 2 pcs.
- Bacon strips 50 g
- Oil 2 tbsp
- Pepper, black ground pinch
- Sugar pinch
Instructions
- 1. Bring about 2 liters of salted water to a boil in a pot and cover it.
- 2. Rinse the turkey steaks, pat them dry with kitchen paper, and set them aside to reach room temperature.
- 3. Wash the thyme, shake it dry, strip the leaves from the stems, and chop them finely.
- 4. Wash the green beans, trim the ends, and boil them in the salted water for 8 to 10 minutes.
- 5. Drain the beans in a colander, rinse them with cold water, and let them drain well.
- 6. Clean the pot you used to cook the beans.
- 7. Halve the garlic, peel it, and chop it very finely.
- 8. In a bowl, mix 4 tablespoons of soft butter with breadcrumbs, salt, and about one-third of the chopped thyme and garlic.
- 9. Preheat the oven to 180 degrees Celsius (convection mode).
- 10. Bring the rice to a boil in the cleaned pot with 600 milliliters of salted water.
- 11. Simmer the rice covered on low to medium heat for 15 to 17 minutes.
- 12. Wash the tomatoes and halve them.
- 13. Halve the onions, peel them, and slice them into thin strips.
- 14. Heat the oil in a frying pan on high heat.
- 15. Sear the turkey steaks on all sides for about 2 minutes.
- 16. Place the steaks on a baking sheet lined with baking paper.
- 17. Season the steaks with salt and pepper.
- 18. Spread the butter crust mixture evenly over both steaks.
- 19. Bake the steaks in the oven on the top rack for 8 to 10 minutes until golden brown.
- 20. Leave the frying pan uncleaned.
- 21. Add the bacon strips to the frying fat in the pan.
- 22. Reduce the heat to medium and fry the bacon for about 2 minutes.
- 23. Add the tomatoes, onions, remaining garlic, and sugar.
- 24. Fry the mixture for about 4 minutes.
- 25. Stir in the remaining thyme, 2 tablespoons of butter, and the beans.
- 26. Fry the sauce for another 1 to 2 minutes and season with salt and pepper.
- 27. Fluff the rice with a fork.
- 28. Take the turkey steaks out of the oven.
- 29. Plate the turkey steaks and rice and serve them together with the tomato-bean ragout.
