  1. 1. Bring about 2 liters of salted water to a boil in a pot and cover it.
  2. 2. Rinse the turkey steaks, pat them dry with kitchen paper, and set them aside to reach room temperature.
  3. 3. Wash the thyme, shake it dry, strip the leaves from the stems, and chop them finely.
  4. 4. Wash the green beans, trim the ends, and boil them in the salted water for 8 to 10 minutes.
  5. 5. Drain the beans in a colander, rinse them with cold water, and let them drain well.
  6. 6. Clean the pot you used to cook the beans.
  7. 7. Halve the garlic, peel it, and chop it very finely.
  8. 8. In a bowl, mix 4 tablespoons of soft butter with breadcrumbs, salt, and about one-third of the chopped thyme and garlic.
  9. 9. Preheat the oven to 180 degrees Celsius (convection mode).
  10. 10. Bring the rice to a boil in the cleaned pot with 600 milliliters of salted water.
  11. 11. Simmer the rice covered on low to medium heat for 15 to 17 minutes.
  12. 12. Wash the tomatoes and halve them.
  13. 13. Halve the onions, peel them, and slice them into thin strips.
  14. 14. Heat the oil in a frying pan on high heat.
  15. 15. Sear the turkey steaks on all sides for about 2 minutes.
  16. 16. Place the steaks on a baking sheet lined with baking paper.
  17. 17. Season the steaks with salt and pepper.
  18. 18. Spread the butter crust mixture evenly over both steaks.
  19. 19. Bake the steaks in the oven on the top rack for 8 to 10 minutes until golden brown.
  20. 20. Leave the frying pan uncleaned.
  21. 21. Add the bacon strips to the frying fat in the pan.
  22. 22. Reduce the heat to medium and fry the bacon for about 2 minutes.
  23. 23. Add the tomatoes, onions, remaining garlic, and sugar.
  24. 24. Fry the mixture for about 4 minutes.
  25. 25. Stir in the remaining thyme, 2 tablespoons of butter, and the beans.
  26. 26. Fry the sauce for another 1 to 2 minutes and season with salt and pepper.
  27. 27. Fluff the rice with a fork.
  28. 28. Take the turkey steaks out of the oven.
  29. 29. Plate the turkey steaks and rice and serve them together with the tomato-bean ragout.
