🍽️ Turkey Rolls with Caper Filling and Gnocchi

Ingredients
- Turkey breast cutlets 600 g
- Spring onions 3 pcs
- Capers 2 tbsp
- Parmesan 25 g
- Oil 3 tbsp
- Black Forest ham 100 g
- Pepper, black ground pinch
- Salt pinch
- Red wine, dry 200 ml
- Vegetable broth 300 ml
- Balsamic vinegar, light 1 tsp
- Gnocchi, fresh 800 g
- Cornstarch 2 tsp
- Sugar pinch
Instructions
- 1. Rinse the turkey meat under cold water.
- 2. Thoroughly dry the meat with a kitchen towel.
- 3. Place the meat between two layers of cling film.
- 4. Gently pound the meat flat until it is thin.
- 5. Clean the spring onions and cut off the ends.
- 6. Slice the spring onions diagonally into thin rings.
- 7. Drain the capers well.
- 8. Finely chop the capers.
- 9. Grate the Parmesan finely.
- 10. Mix the Parmesan with the spring onions in a bowl.
- 11. Add the chopped capers to the mixture.
- 12. Add one tablespoon of olive oil.
- 13. Stir the filling well.
- 14. Place a turkey cutlet on a slice of ham.
- 15. Season the meat with pepper.
- 16. Distribute the caper mixture evenly over the meat.
- 17. Roll the meat up tightly.
- 18. Secure the roll with a wooden skewer.
- 19. Bring about five liters of salted water to a boil in a large pot.
- 20. Heat the remaining oil in another pot over medium to high heat.
- 21. Fry the rolls on all sides for about five minutes.
- 22. Start with the seam side facing down.
- 23. Add wine, broth, and one teaspoon of vinegar to the pot.
- 24. Simmer the rolls covered over low heat for about eight to ten minutes.
- 25. Cook the gnocchi in the boiling salted water for about three minutes.
- 26. Drain the gnocchi in a sieve.
- 27. Smoothly mix the cornstarch with two tablespoons of cold water in a bowl.
- 28. Carefully remove the turkey rolls from the pot.
- 29. Stir the prepared cornstarch into the sauce.
- 30. Continue to simmer the sauce for about three minutes.
- 31. Season the sauce with salt, pepper, sugar, and vinegar.
- 32. Return the rolls to the sauce.
- 33. Serve the rolls together with the gnocchi.
