  4. 4. Gently pound the meat flat until it is thin.
  5. 5. Clean the spring onions and cut off the ends.
  6. 6. Slice the spring onions diagonally into thin rings.
  7. 7. Drain the capers well.
  8. 8. Finely chop the capers.
  9. 9. Grate the Parmesan finely.
  10. 10. Mix the Parmesan with the spring onions in a bowl.
  11. 11. Add the chopped capers to the mixture.
  12. 12. Add one tablespoon of olive oil.
  13. 13. Stir the filling well.
  14. 14. Place a turkey cutlet on a slice of ham.
  15. 15. Season the meat with pepper.
  16. 16. Distribute the caper mixture evenly over the meat.
  17. 17. Roll the meat up tightly.
  18. 18. Secure the roll with a wooden skewer.
  19. 19. Bring about five liters of salted water to a boil in a large pot.
  20. 20. Heat the remaining oil in another pot over medium to high heat.

  23. 23. Add wine, broth, and one teaspoon of vinegar to the pot.
  24. 24. Simmer the rolls covered over low heat for about eight to ten minutes.
  25. 25. Cook the gnocchi in the boiling salted water for about three minutes.
  26. 26. Drain the gnocchi in a sieve.
  27. 27. Smoothly mix the cornstarch with two tablespoons of cold water in a bowl.
  28. 28. Carefully remove the turkey rolls from the pot.
  29. 29. Stir the prepared cornstarch into the sauce.
  30. 30. Continue to simmer the sauce for about three minutes.
  31. 31. Season the sauce with salt, pepper, sugar, and vinegar.
  32. 32. Return the rolls to the sauce.
