  1. 1. Soak the wooden skewers in cold water.
  2. 2. Peel the mango and remove the flesh from the pit.
  3. 3. Slice half of the mango flesh into thin slices.
  4. 4. Wash the parsley and dry it thoroughly.
  5. 5. Separate the parsley leaves from the stems.
  6. 6. Chop the parsley leaves coarsely.
  7. 7. Rinse the turkey cutlets and pat them dry with a kitchen towel.
  8. 8. Place the turkey cutlets between cling film.
  9. 9. Pound the cutlets flat until they are thin.
  10. 10. Place a slice of ham on each turkey cutlet.
  11. 11. Distribute the mango slices evenly over the ham.
  12. 12. Distribute the chopped parsley evenly over the mango.
  13. 13. Roll the cutlets up tightly.
  14. 14. Cut the rolls crosswise into pieces about 3 cm thick.
  15. 15. Drain the skewers after they have been in water.
  16. 16. Thread 3 to 4 pieces of meat onto each skewer.
  17. 17. Drizzle the skewers with a little oil.
  18. 18. Season the skewers to taste.
  19. 19. Cook the skewers on the hot grill for 10 to 12 minutes.
  20. 20. Puree the remaining mango flesh in a tall container.
  21. 21. Halve the lemon and squeeze out the juice.
  22. 22. Mix the mango puree in a bowl with sour cream.
  23. 23. Season the dip with salt, pepper, curry, and lemon juice.
  24. 24. Serve the dip together with the skewers.
