  2. 2. Dry the leaves with a kitchen towel.
  3. 3. Remove the coarse stems from the coriander.
  4. 4. Finely chop the coriander leaves.
  5. 5. Place the chopped coriander into a bowl.
  6. 6. Add the yogurt, salt, and pepper.
  7. 7. Mix the ingredients well together.
  8. 8. Rinse the turkey meat under running water.
  9. 9. Dry the meat with kitchen paper.
  10. 10. Cut the turkey meat into thin strips.
  11. 11. Place the turkey strips into a separate bowl.
  12. 12. Take half of the yogurt mixture.
  13. 13. Marinate the turkey strips with the half portion of yogurt.
  14. 14. Set the marinated strips aside.
  15. 15. Place the lentils into a pot.
  16. 16. Pour 600 milliliters of water over the lentils.
  17. 17. Bring the mixture to a boil.
  18. 18. Simmer the lentils for about 7 minutes over medium heat.
  19. 19. Halve the onion while the lentils are cooking.
  20. 20. Peel the onion halves.
  21. 21. Dice the onion finely.
  22. 22. Rinse the lemon under hot water.
  23. 23. Grate about 1 teaspoon of lemon zest.
  24. 24. Drain the cooked lentils into a sieve.
  25. 25. Add 1 tablespoon of oil to the same pot.
  26. 26. Heat the oil over medium heat.
  27. 27. Add the diced onion to the hot oil.
  28. 28. Sweat the onion for about 2 minutes.
  29. 29. Return the drained lentils to the pot.

  32. 32. Add the chopped tomatoes to the pot.
  33. 33. Pour in 100 milliliters of water.

  35. 35. Cook everything for approx. 8 minutes over low heat.

  45. 45. Add the lemon zest to the dal.

  47. 47. Add a pinch of sugar.
  48. 48. Add 1 teaspoon of vinegar.
  49. 49. Taste the sauce and adjust seasoning.
  50. 50. Plate the red lentil dal.
  51. 51. Place the fried turkey strips on top of the dal.
  52. 52. Drizzle the dish with the remaining yogurt.
