🍽️ Crispy Puszta Schnitzel with Parsley Potatoes

Ingredients
- potatoes, waxy 1 kg
- salt pinch
- Puszta salad 600 g
- ham schnitzel from the top round of pork 4 pcs.
- wheat flour, Type 405 2 tbsp
- butter 3 tbsp
- tomato paste 4 tbsp
- pepper, black ground pinch
- parsley, fresh 20 g
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into coarse cubes.
- 3. Place the potato cubes in a pot with salted water.
- 4. Bring the water to a boil.
- 5. Reduce the heat to medium.
- 6. Cover the pot.
- 7. Cook the potatoes for about 20 minutes until tender.
- 8. Place the Puszta salad in a colander to drain.
- 9. Collect 4 tablespoons of the salad juice and set it aside.
- 10. Rinse the schnitzels briefly.
- 11. Pat the schnitzels dry with kitchen paper.
- 12. Place a schnitzel between two layers of cling film.
- 13. Gently pound the schnitzel flat.
- 14. Repeat this with all schnitzels.
- 15. Lightly dust the schnitzels with flour on both sides.
- 16. Heat 2 tablespoons of butter in a pan over high heat.
- 17. Fry the schnitzels in the hot butter.
- 18. Fry them for about 2 minutes on each side until golden brown.
- 19. Remove the cooked schnitzels from the pan.
- 20. Place the schnitzels on a plate.
- 21. Keep the schnitzels warm, covered.
- 22. Add the drained Puszta salad to the pan.
- 23. Add the collected juice to the pan.
- 24. Add the tomato paste to the pan.
- 25. Cook the mixture over low heat.
- 26. Let the sauce reduce for about 3 minutes.
- 27. Season the sauce with salt and pepper.
- 28. Wash the parsley and shake it dry.
- 29. Pick the parsley leaves off the stems.
- 30. Finely chop the parsley leaves.
- 31. Drain the cooked potatoes.
- 32. Add 1 tablespoon of butter to the hot potatoes.
- 33. Let the butter melt into the potatoes.
- 34. Stir the chopped parsley into the potatoes.
- 35. Mix everything well together.
- 36. Plate the potatoes.
- 37. Place a schnitzel in the center of the potatoes.
- 38. Serve the dish together with the slightly warm Puszta salad.
