🍽️ Tender Pulled Pork with Crispy Sweet Potato Wedges, Fresh Avocado and Herb Cream

Ingredients
- sweet potatoes 1 kg
- oil 4 tbsp
- fries seasoning salt pinch
- pulled pork 500 g
- organic limes 2 pcs
- avocado 1 pc
- salt pinch
- pepper, black ground pinch
- chili, ground pinch
- sour cream 200 g
- mint, fresh 20 g
Instructions
- 1. Preheat the oven to 220 degrees Celsius using top and bottom heat.
- 2. Thoroughly wash the sweet potatoes.
- 3. Peel the sweet potatoes completely.
- 4. Cut the sweet potatoes into wedges approximately two centimeters wide.
- 5. Line a baking tray with baking paper.
- 6. Spread the sweet potato wedges evenly on the tray.
- 7. Ensure that the wedges do not touch each other.
- 8. Drizzle the sweet potatoes with oil.
- 9. Sprinkle french fry seasoning over them.
- 10. Place the tray in the preheated oven.
- 11. Bake the sweet potatoes for about 25 minutes until golden brown.
- 12. Turn the sweet potatoes after about 12 minutes.
- 13. Place the pulled pork into a baking dish.
- 14. Heat the meat in the oven for 20 to 25 minutes.
- 15. Wash the limes under running water.
- 16. Cut one lime in half.
- 17. Squeeze the juice from the lime halves.
- 18. Cut the second lime into wedges.
- 19. Halve the avocado lengthwise.
- 20. Remove the pit of the avocado.
- 21. Scoop out the flesh of the avocado with a spoon.
- 22. Chop the avocado flesh into small pieces.
- 23. Take a bowl and put the avocado in it.
- 24. Add the lime juice to the avocado.
- 25. Season the mixture with salt.
- 26. Season the mixture with pepper.
- 27. Add chili.
- 28. Mix all ingredients in the bowl well.
- 29. Take a second bowl and put the sour cream in it.
- 30. Season the sour cream with salt.
- 31. Season the sour cream with pepper.
- 32. Wash the mint under running water.
- 33. Shake the mint dry.
- 34. Remove the mint leaves from the stems.
- 35. Chop the mint leaves finely.
- 36. Place the sweet potato wedges on the plates.
- 37. Top the sweet potatoes with the warm pulled pork.
- 38. Add the avocado mixture as a topping.
- 39. Add the seasoned sour cream.
- 40. Sprinkle the chopped mint over it.
- 41. Garnish the dish with the lime wedges.
