  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Bring butter, salt, and water to a boil in a pot until the butter is completely melted.
  3. 3. Mix flour and sugar in a separate bowl.
  4. 4. Add the flour mixture to the boiling water while stirring constantly.
  5. 5. Continue stirring over medium heat until a firm dough forms and a white layer settles at the bottom of the pot.
  6. 6. Transfer the dough to a bowl and let it cool for about 10 minutes.
  7. 7. Carefully stir the eggs into the cooled dough one by one.
  8. 8. Continue stirring until a smooth and glossy mass forms.
  9. 9. Fill the dough into a piping bag.
  10. 10. Pipe small dollops onto a baking sheet lined with baking paper.
  11. 11. Place a bowl of boiling water on the lower rack of the oven.
  12. 12. Slide the tray with the dough portions onto the rack above the water bowl.
  13. 13. Bake the profiteroles for about 20 minutes.
  14. 14. Do not open the oven door for the first 15 minutes to prevent the profiteroles from collapsing.
  15. 15. Remove the tray from the oven after baking.
  16. 16. Let the profiteroles cool on a wire rack.
  17. 17. Chop the chocolate roughly in the meantime.
  18. 18. Heat 100 grams of cream in a pot.
  19. 19. Melt the chopped chocolate in the hot cream.
  20. 20. Flavor the sauce with whiskey to taste.
  21. 21. Keep the chocolate sauce warm.
  22. 22. Whip the remaining cream in a tall container with cream stabilizer and vanilla sugar until stiff.
  23. 23. Fill the whipped cream into a piping bag fitted with a small round tip.
  24. 24. Pipe some cream into each profiterole.
  25. 25. Arrange the filled profiteroles on plates.
  26. 26. Pour the warm chocolate sauce over the profiteroles.
  27. 27. Enjoy the profiteroles immediately.
