🍰 Crispy Profiteroles with Cream and Chocolate Glaze

Ingredients
- butter 50 g
- Salt Pinch
- Water 250 ml
- Wheat flour, Type 405 150 g
- Sugar 1 tbsp
- Eggs 4 pcs
- Chocolate, dark 75 g
- Whipping cream 450 g
- whisky 10 ml
- Cream stabilizer 10 g
- Vanilla sugar 20 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Bring butter, salt, and water to a boil in a pot until the butter is completely melted.
- 3. Mix flour and sugar in a separate bowl.
- 4. Add the flour mixture to the boiling water while stirring constantly.
- 5. Continue stirring over medium heat until a firm dough forms and a white layer settles at the bottom of the pot.
- 6. Transfer the dough to a bowl and let it cool for about 10 minutes.
- 7. Carefully stir the eggs into the cooled dough one by one.
- 8. Continue stirring until a smooth and glossy mass forms.
- 9. Fill the dough into a piping bag.
- 10. Pipe small dollops onto a baking sheet lined with baking paper.
- 11. Place a bowl of boiling water on the lower rack of the oven.
- 12. Slide the tray with the dough portions onto the rack above the water bowl.
- 13. Bake the profiteroles for about 20 minutes.
- 14. Do not open the oven door for the first 15 minutes to prevent the profiteroles from collapsing.
- 15. Remove the tray from the oven after baking.
- 16. Let the profiteroles cool on a wire rack.
- 17. Chop the chocolate roughly in the meantime.
- 18. Heat 100 grams of cream in a pot.
- 19. Melt the chopped chocolate in the hot cream.
- 20. Flavor the sauce with whiskey to taste.
- 21. Keep the chocolate sauce warm.
- 22. Whip the remaining cream in a tall container with cream stabilizer and vanilla sugar until stiff.
- 23. Fill the whipped cream into a piping bag fitted with a small round tip.
- 24. Pipe some cream into each profiterole.
- 25. Arrange the filled profiteroles on plates.
- 26. Pour the warm chocolate sauce over the profiteroles.
- 27. Enjoy the profiteroles immediately.
