🍽️ Power Bowl with Bulgur and Tofu

Ingredients
- vegetable broth 600 ml
- bulgur 200 g
- salt pinch
- broccoli 1 pc.
- snow peas 250 g
- oranges 2 pc.
- pine nuts 2 tbsp
- tofu, plain 400 g
- soy sauce 2 tbsp
- sunflower oil 2 tbsp
- avocado 1 pc.
- organic limes 1 pc.
- shallots 2 pc.
- yogurt, plain 250 g
- honey 2 tsp
- balsamic vinegar, light 1 tbsp
- pepper, black ground pinch
Instructions
- 1. Bring the vegetable broth to a boil in a pot.
- 2. Stir the bulgur into the boiling broth.
- 3. Let the mixture boil for about 1 minute.
- 4. Remove the pot from the heat.
- 5. Let the bulgur swell for about 10 minutes with the lid on.
- 6. Distribute the bulgur onto 4 large bowls or plates.
- 7. Bring about 2 liters of salted water to a boil in another pot.
- 8. Wash the broccoli thoroughly.
- 9. Cut the broccoli into florets about 2 cm in size.
- 10. Peel the stem of the broccoli.
- 11. Slice the stem into thin slices.
- 12. Wash the snow peas.
- 13. Cook the broccoli in the boiling water for about 3 to 4 minutes.
- 14. Add the snow peas and broccoli slices after about 2 minutes.
- 15. Cook everything for another 1 to 2 minutes.
- 16. Drain the vegetables in a colander.
- 17. Rinse the vegetables with cold water to stop the cooking process.
- 18. Let the vegetables drain.
- 19. Arrange the vegetables on top of the bulgur.
- 20. Peel the orange completely with a sharp knife.
- 21. Remove the white pith.
- 22. Release the fruit segments with V-shaped cuts.
- 23. Catch the juice in the process.
- 24. Toast the pine nuts in a pan without fat for about 2 minutes until golden brown.
- 25. Place the toasted pine nuts on a plate.
- 26. Cut the tofu into slices about 1 cm thick.
- 27. Drizzle the tofu with soy sauce.
- 28. Heat the oil in a pan over high heat.
- 29. Fry the tofu with a little salt on all sides for 6 to 8 minutes until golden brown.
- 30. Let the tofu drain on kitchen paper.
- 31. Wash the lime.
- 32. Halve the lime.
- 33. Squeeze the juice of the lime.
- 34. Halve the avocado.
- 35. Remove the pit of the avocado.
- 36. Remove the flesh of the avocado from the skin with a spoon.
- 37. Cut the flesh into slices.
- 38. Mix the avocado slices with lime juice.
- 39. Arrange the avocado slices together with the tofu, orange segments, and pine nuts on the vegetables in the bowls.
- 40. Peel the shallots.
- 41. Dice the shallots finely.
- 42. Mix the yogurt, the collected orange juice, and the honey well in a bowl.
- 43. Season the dressing with vinegar, salt, and pepper.
- 44. Distribute the dressing on the power bowls.
- 45. Serve the bowls.
