🍰 Port Wine Pears with Blue Cheese Cream

Ingredients
- Red wine, dry 600 ml
- Balsamic vinegar, light 50 ml
- Sea salt pinch
- Brown sugar 2 tbsp
- Pears 4 pcs.
- Walnut kernels 4 tbsp
- Thyme, fresh 10 g
- Blue cheese 100 g
- Sour cream 4 tbsp
- Pepper, black ground pinch
Instructions
- 1. The day before, bring wine (preferably port wine, alternatively sweet red wine), balsamic vinegar, salt, and sugar to a boil in a pot. Peel the pears, cut them in half, remove the core, and cook them in the boiling port wine for about 5–7 minutes until tender but not falling apart.
- 2. Place the pears in a bowl, reduce the port wine for about 3 minutes until thickened, pour it over the pears, and let it cool. Let it steep overnight.
- 3. Before serving, roughly chop the walnuts. Heat a pan over medium heat and dry roast the walnuts for about 2 minutes.
- 4. Wash the thyme, shake off excess water, and strip the leaves from the stems. Cube the blue cheese. In a bowl, mix the cheese with sour cream and thyme. Season with pepper.
- 5. Drain the pear halves and arrange them on plates. Spread the cheese cream on top, drizzle some of the port wine reduction around, and sprinkle with walnuts.
