  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Cut the cold butter into cubes of about 2 cm.
  3. 3. Mix the butter cubes in a bowl with flour, one egg, salt, and water.
  4. 4. Knead the ingredients into a smooth dough using your hands.
  5. 5. Grease a tart pan with butter.
  6. 6. Dust a work surface with flour and roll out the dough to about 2 mm thickness.
  7. 7. Place the dough into the prepared pan.
  8. 8. Press the dough firmly against the bottom and sides of the pan.
  9. 9. Trim the excess dough at the edge with a knife.
  10. 10. Prick the bottom of the dough several times with a fork.
  11. 11. Place a piece of baking paper on the dough base.
  12. 12. Spread dry legumes, such as peas, on the baking paper to weigh down the dough.
  13. 13. Bake the dough base for about 15 minutes until golden brown.
  14. 14. Carefully remove the baking paper and the legumes.
  15. 15. Quarter the leek lengthwise.
  16. 16. Rinse the leek thoroughly under running water.
  17. 17. Cut off the hard root ends from the leek.
  18. 18. Cut the cleaned leek into thin strips.
  19. 19. Cut the grilled sausage into small cubes.
  20. 20. Heat 2 tablespoons of butter in a pan.
  21. 21. Fry the sausage cubes over medium to high heat for 2 to 3 minutes.
  22. 22. Add the leek strips to the sausage and simmer for 2 to 3 minutes.
  23. 23. Whisk crème fraîche with 3 eggs in a bowl.
  24. 24. Season the egg mixture with salt, pepper, and curry.
  25. 25. Gently fold the leek and sausage mixture into the egg mixture.
  26. 26. Spread the filling evenly over the pre-baked dough base.
  27. 27. Bake the tart in the oven for 35 to 45 minutes.
  28. 28. Carefully remove the tart from the oven.
  29. 29. Let the tart cool down for a short time.
  30. 30. Plate the tart and serve it.
