🍽️ Leek Tart with Grilled Sausage

Ingredients
- butter 150 g
- wheat flour, Type 405 300 g
- eggs 4 pcs
- salt pinch
- water 50 ml
- leek 2 pcs
- grilled sausages 400 g
- crème fraîche 200 g
- pepper, black ground pinch
- curry powder 1 tsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Cut the cold butter into cubes of about 2 cm.
- 3. Mix the butter cubes in a bowl with flour, one egg, salt, and water.
- 4. Knead the ingredients into a smooth dough using your hands.
- 5. Grease a tart pan with butter.
- 6. Dust a work surface with flour and roll out the dough to about 2 mm thickness.
- 7. Place the dough into the prepared pan.
- 8. Press the dough firmly against the bottom and sides of the pan.
- 9. Trim the excess dough at the edge with a knife.
- 10. Prick the bottom of the dough several times with a fork.
- 11. Place a piece of baking paper on the dough base.
- 12. Spread dry legumes, such as peas, on the baking paper to weigh down the dough.
- 13. Bake the dough base for about 15 minutes until golden brown.
- 14. Carefully remove the baking paper and the legumes.
- 15. Quarter the leek lengthwise.
- 16. Rinse the leek thoroughly under running water.
- 17. Cut off the hard root ends from the leek.
- 18. Cut the cleaned leek into thin strips.
- 19. Cut the grilled sausage into small cubes.
- 20. Heat 2 tablespoons of butter in a pan.
- 21. Fry the sausage cubes over medium to high heat for 2 to 3 minutes.
- 22. Add the leek strips to the sausage and simmer for 2 to 3 minutes.
- 23. Whisk crème fraîche with 3 eggs in a bowl.
- 24. Season the egg mixture with salt, pepper, and curry.
- 25. Gently fold the leek and sausage mixture into the egg mixture.
- 26. Spread the filling evenly over the pre-baked dough base.
- 27. Bake the tart in the oven for 35 to 45 minutes.
- 28. Carefully remove the tart from the oven.
- 29. Let the tart cool down for a short time.
- 30. Plate the tart and serve it.
