  1. 1. In a pot, bring the rice to a boil with about 700 ml of salted water and cook for about 12 minutes. Then drain and let cool.
  2. 2. Meanwhile, cut the leek lengthwise, slice into thin strips, and wash well. Halve the onions, peel, and dice. Heat the oil in a pan over medium heat and sauté half of the onion together with the leek for about 5 minutes. Season with salt and let cool briefly.
  3. 3. In a bowl, mix the goat cream cheese and sour cream well. Finely chop the olives. Rinse the thyme, shake off excess water, strip the leaves from the stems, and chop finely.
  4. 4. Mix in the remaining onion cubes and olives into the cheese mixture and season with salt and pepper. Combine the rice, leek vegetables, flour, and eggs, and season with salt and pepper as well. Form 12 pancakes from the mixture.
  5. 5. Heat 2 tablespoons of oil in a pan over medium to high heat and fry the pancakes in batches for about 3 minutes on each side until golden brown. Serve together with the goat cheese-olive cream. Enjoy your meal!
