🍰 Fluffy Dutch Mini Pancakes

Ingredients
- milk 300 ml
- wheat flour, Type 405 250 g
- dry yeast 1 packet
- sugar 50 g
- vanilla sugar 1 packet
- salt pinch
- eggs 3 pcs.
- oil 2 tbsp
- butter 50 g
- powdered sugar 2 tbsp
Instructions
- 1. Warm the milk in a pot until it is lukewarm.
- 2. Mix flour, dry yeast, sugar, vanilla sugar, and salt in a large bowl.
- 3. Separate the eggs and set the egg whites aside for another use.
- 4. Add the egg yolks and the lukewarm milk to the flour mixture.
- 5. Beat everything with a hand mixer using dough hooks until you have a smooth batter.
- 6. Cover the bowl and let the batter rise in a warm place for about 30 minutes.
- 7. Brush the indentations of your poffertjes pan with oil.
- 8. Heat the pan over medium heat.
- 9. Fill each indentation with about one teaspoon of batter.
- 10. Bake the poffertjes for about 1 to 2 minutes until small bubbles appear on the surface.
- 11. Slide a skewer under the poffertjes and flip them over.
- 12. Bake them for another 1 minute until they are golden brown.
- 13. Repeat the process with the remaining batter.
- 14. Melt the butter in a small pot over medium heat.
- 15. Serve the warm poffertjes with the melted butter and dusted with powdered sugar.
