🍰 Red Wine Pears with Chocolate Ice Cream and Crunchy Almonds

Ingredients
- Pears 4 pcs.
- Red wine, dry 400 ml
- Cinnamon pinch
- Sugar 150 g
- Almonds, whole 100 g
- Salt pinch
- Cornstarch 2 tbsp
- Chocolate ice cream 4 tbsp
Instructions
- 1. Wash the pears thoroughly.
- 2. Peel the pears completely.
- 3. Cut the pears in half.
- 4. Remove the core from the pear halves.
- 5. Put red wine, cinnamon, and 70 grams of sugar into a pot.
- 6. Bring the liquid in the pot to a boil.
- 7. Place the pears into the boiling liquid.
- 8. Reduce the heat to a low setting.
- 9. Let the pears simmer in the liquid for about 20 to 40 minutes.
- 10. Take the remaining sugar into a clean pot.
- 11. Heat the sugar over low heat.
- 12. Caramelize the sugar for about 2 minutes.
- 13. Remove the pot from the stove as soon as the sugar turns golden brown.
- 14. Add the almonds to the caramelized sugar.
- 15. Add a generous pinch of salt.
- 16. Mix everything well so the almonds are coated.
- 17. Spread the almonds out on a baking sheet lined with baking paper.
- 18. Let the almonds cool down completely.
- 19. Roughly chop the cooled almonds with a knife.
- 20. Take the finished pears out of the red wine syrup.
- 21. Slice the pears in a fan shape.
- 22. Whisk the starch with 50 milliliters of water in a small bowl.
- 23. Bring the remaining red wine syrup to a boil again.
- 24. Stir the starch-water mixture into the boiling syrup.
- 25. Let the sauce boil briefly once more.
- 26. Place the pears on the plates.
- 27. Add a scoop of chocolate ice cream.
- 28. Pour the warm red wine sauce over the pears.
- 29. Sprinkle the dish with the chopped almonds.
- 30. Serve the dessert immediately.
