Ingredients
- eggs 1 pc
- wheat flour, Type 405 300 g
- sugar 80 g
- butter 160 g
- lemons 1 pc
- powdered sugar 350 g
- food coloring, blue 1 tsp
- food coloring, red 1 tsp
- food coloring, yellow 1 tsp
- cocoa powder 1 tsp
Instructions
- 1. Separate the egg. Keep the yolk for the dough and set the white aside for later.
- 2. Mix 300 grams of flour and 80 grams of sugar in a large bowl.
- 3. Add the egg yolk and 160 grams of cold, cubed butter to the flour-sugar mixture.
- 4. Knead the ingredients with your hands until you have a smooth dough.
- 5. Wrap the dough in plastic wrap.
- 6. Chill the dough in the refrigerator for about 30 minutes.
- 7. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 8. Take the dough out of the fridge and knead it briefly.
- 9. Dust a work surface with flour and roll out the dough to about 0.5 cm thickness.
- 10. Cut out squares from the dough using a cookie cutter.
- 11. Place the cookies on a baking sheet lined with baking paper.
- 12. Bake the cookies for 12 to 15 minutes until golden brown.
- 13. Remove the cookies from the oven and let them cool down completely.
- 14. Cut a lemon in half and squeeze out the juice.
- 15. Mix 150 grams of powdered sugar with 2 tablespoons of lemon juice until smooth.
- 16. Divide the sugar mixture into two bowls.
- 17. Color the mixture in one bowl with blue food coloring.
- 18. Brush the cooled cookies alternately with white and blue icing.
- 19. Let the icing on the cookies dry completely.
- 20. Whip the previously separated egg white stiffly using a hand mixer with a whisk attachment.
- 21. Sift 200 grams of powdered sugar over the egg white.
- 22. Gently fold in 1 teaspoon of lemon juice into the mixture.
- 23. Divide this white mixture into several small bowls.
- 24. Color the portions as you like with food coloring.
- 25. Mix one portion with cocoa powder for brown icing.
- 26. Fill the different icings into separate freezer bags.
- 27. Cut a small corner off each bag.
- 28. Decorate the cookies creatively with the colorful icings.
