  1. 1. Preheat the oven to 200 degrees Celsius with fan setting.
  2. 2. Wash the lemon thoroughly.
  3. 3. Finely grate about one teaspoon of the lemon zest.
  4. 4. Drain the olives well.
  5. 5. Chop the olives finely.
  6. 6. Chop the pine nuts finely as well.
  7. 7. Crumble the feta cheese into small pieces.
  8. 8. Shred the mozzarella into small strands.
  9. 9. Place the olives, pine nuts, feta, and mozzarella into a bowl.
  10. 10. Add the grated lemon zest to the filling.
  11. 11. Season the mixture with oregano.
  12. 12. Add pepper.
  13. 13. Salt the filling to taste.
  14. 14. Mix all filling ingredients thoroughly.
  15. 15. Roll out the pizza dough flat.
  16. 16. Spread the filling evenly over the dough.
  17. 17. Leave about four centimeters empty at the top long edge.
  18. 18. Roll the dough up tightly starting from the long side.
  19. 19. Cut the dough roll into pieces about four centimeters thick.
  20. 20. Line a baking tray with baking paper.
  21. 21. Place the dough pieces on the tray with some space between them.
  22. 22. Bake the rolls in the oven for about 15 minutes.
  23. 23. Remove them when they are golden brown.
  24. 24. Serve the pizza rolls warm or cold.
