🍕 Classic Pizza Napoletana

Ingredients
- yeast, fresh 40 g
- water 200 ml
- sugar 1 tsp
- wheat flour, type 405 350 g
- salt 1.5 tsp
- olive oil 7 tbsp
- basil, fresh 50 g
- garlic cloves 1 pc.
- vegetable onions 1 pc.
- tomatoes, pureed 300 g
- Italian herbs, dried 4 tsp
- tomato paste 2 tbsp
- Vemondo grated cheese 200 g
Instructions
- 1. Dissolve the yeast in lukewarm water and sugar.
- 2. Let the yeast mixture rest covered for about 10 minutes.
- 3. Add flour, one teaspoon of salt, and four tablespoons of olive oil to the bowl.
- 4. Knead the dough with a hand mixer and dough hooks for about 5 minutes until smooth.
- 5. Let the dough rise covered in a warm place for about 1 hour until it has doubled in size.
- 6. Alternatively, you can brush the dough with a little olive oil and let it rise overnight in the closed refrigerator.
- 7. If you let it rise in the fridge, take the dough out about 1 hour before baking.
- 8. Preheat the oven to 250 degrees Celsius with top and bottom heat.
- 9. Line a baking sheet with baking paper.
- 10. Wash the basil and shake it dry.
- 11. Pluck the basil leaves from the stems.
- 12. Peel the garlic clove and chop it finely.
- 13. Halve the small spring onions, peel them, and chop them finely.
- 14. Mix the garlic, onions, pureed tomatoes, Italian herbs, tomato paste, two tablespoons of olive oil, half a teaspoon of salt, and half of the basil in a bowl.
- 15. Optionally, puree the sauce with a hand blender to your desired consistency.
- 16. Dust a work surface with flour.
- 17. Shape the dough into a round, press it flat, and stretch it out.
- 18. Leave a border of about 1 to 2 centimeters.
- 19. Place the dough on the prepared baking sheet.
- 20. Spread the prepared sauce over the dough.
- 21. Sprinkle the pizza with vegan grated cheese.
- 22. Drizzle one tablespoon of olive oil over the pizza.
- 23. Bake the pizza for about 10 minutes until golden brown and crispy.
- 24. Garnish the finished pizza with the remaining fresh basil.
