  1. 1. Dissolve the yeast in lukewarm water and sugar.
  2. 2. Let the yeast mixture rest covered for about 10 minutes.
  3. 3. Add flour, one teaspoon of salt, and four tablespoons of olive oil to the bowl.
  4. 4. Knead the dough with a hand mixer and dough hooks for about 5 minutes until smooth.
  5. 5. Let the dough rise covered in a warm place for about 1 hour until it has doubled in size.
  6. 6. Alternatively, you can brush the dough with a little olive oil and let it rise overnight in the closed refrigerator.
  7. 7. If you let it rise in the fridge, take the dough out about 1 hour before baking.
  8. 8. Preheat the oven to 250 degrees Celsius with top and bottom heat.
  9. 9. Line a baking sheet with baking paper.
  10. 10. Wash the basil and shake it dry.
  11. 11. Pluck the basil leaves from the stems.
  12. 12. Peel the garlic clove and chop it finely.
  13. 13. Halve the small spring onions, peel them, and chop them finely.
  14. 14. Mix the garlic, onions, pureed tomatoes, Italian herbs, tomato paste, two tablespoons of olive oil, half a teaspoon of salt, and half of the basil in a bowl.
  15. 15. Optionally, puree the sauce with a hand blender to your desired consistency.
  16. 16. Dust a work surface with flour.
  17. 17. Shape the dough into a round, press it flat, and stretch it out.
  18. 18. Leave a border of about 1 to 2 centimeters.
  19. 19. Place the dough on the prepared baking sheet.
  20. 20. Spread the prepared sauce over the dough.
  21. 21. Sprinkle the pizza with vegan grated cheese.
  22. 22. Drizzle one tablespoon of olive oil over the pizza.
  23. 23. Bake the pizza for about 10 minutes until golden brown and crispy.
  24. 24. Garnish the finished pizza with the remaining fresh basil.
