  1. 1. Combine wheat flour, spelt flour, and dry yeast in a bowl.
  2. 2. Add 1 teaspoon of salt, 3 tablespoons of oil, and lukewarm water.
  3. 3. Knead the ingredients into a smooth dough.
  4. 4. Place the dough in the oven at 50 °C for about 45 minutes to let it rise.
  5. 5. Peel the garlic and chop it finely.
  6. 6. Halve the onion, peel it, and dice it finely.
  7. 7. Wash the basil, shake it dry, and pluck the leaves from the stems.
  8. 8. Chop the basil leaves finely.
  9. 9. Halve the lemon and squeeze out the juice.
  10. 10. Wash the tomato and remove the stem.
  11. 11. Dice the tomato finely.
  12. 12. Heat 4 tablespoons of oil in a pot over medium to high heat.
  13. 13. Sauté the onions and garlic for about 2 to 3 minutes.
  14. 14. Stir in the tomato paste and chopped basil, and cook everything for about 2 minutes.
  15. 15. Add the canned tomatoes and the fresh tomato.
  16. 16. Season the sauce with 1 tablespoon of sugar, oregano, chili powder, and 2 tablespoons of lemon juice.
  17. 17. Let the sauce simmer gently for about 10 to 15 minutes.
  18. 18. Adjust the seasoning of the sauce with salt and pepper.
  19. 19. Wash the broccoli and break it into small florets.
  20. 20. Wash the mushrooms and slice them.
  21. 21. Wash the cherry tomatoes and cut them in half.
  22. 22. Remove the pizza dough from the oven.
  23. 23. Preheat the oven to 220 °C with top and bottom heat.
  24. 24. Sprinkle some flour on the work surface and roll out the dough.
  25. 25. Spread the tomato sauce evenly over the dough.
  26. 26. Top the pizza with broccoli, mushrooms, cherry tomatoes, and cheese.
  27. 27. Bake the pizza for about 10 to 12 minutes in the oven.
  28. 28. Carefully remove the pizza from the oven.
  29. 29. Sprinkle the pizza with the remaining fresh basil.
  30. 30. Cut the pizza into pieces and serve it.
