🍕 Broccoli and Mushroom Pizza

Ingredients
- all-purpose flour, Type 405 300 g
- spelt flour, Type 630 200 g
- dried yeast 1 packet
- salt pinch
- olive oil 7 tbsp
- water 270 ml
- garlic cloves 2 pcs
- onions, yellow 1 pc
- basil, fresh 20 g
- lemons 1 pc
- vine tomatoes 1 pc
- tomato paste 6 tbsp
- tomatoes, chopped 400 g
- brown sugar 1 tbsp
- oregano, dried 1 tsp
- chili, ground pinch
- pepper, black ground pinch
- broccoli 1 pc
- mushrooms, white 200 g
- cherry tomatoes 200 g
- Vemondo Grating Delight 200 g
Instructions
- 1. Combine wheat flour, spelt flour, and dry yeast in a bowl.
- 2. Add 1 teaspoon of salt, 3 tablespoons of oil, and lukewarm water.
- 3. Knead the ingredients into a smooth dough.
- 4. Place the dough in the oven at 50 °C for about 45 minutes to let it rise.
- 5. Peel the garlic and chop it finely.
- 6. Halve the onion, peel it, and dice it finely.
- 7. Wash the basil, shake it dry, and pluck the leaves from the stems.
- 8. Chop the basil leaves finely.
- 9. Halve the lemon and squeeze out the juice.
- 10. Wash the tomato and remove the stem.
- 11. Dice the tomato finely.
- 12. Heat 4 tablespoons of oil in a pot over medium to high heat.
- 13. Sauté the onions and garlic for about 2 to 3 minutes.
- 14. Stir in the tomato paste and chopped basil, and cook everything for about 2 minutes.
- 15. Add the canned tomatoes and the fresh tomato.
- 16. Season the sauce with 1 tablespoon of sugar, oregano, chili powder, and 2 tablespoons of lemon juice.
- 17. Let the sauce simmer gently for about 10 to 15 minutes.
- 18. Adjust the seasoning of the sauce with salt and pepper.
- 19. Wash the broccoli and break it into small florets.
- 20. Wash the mushrooms and slice them.
- 21. Wash the cherry tomatoes and cut them in half.
- 22. Remove the pizza dough from the oven.
- 23. Preheat the oven to 220 °C with top and bottom heat.
- 24. Sprinkle some flour on the work surface and roll out the dough.
- 25. Spread the tomato sauce evenly over the dough.
- 26. Top the pizza with broccoli, mushrooms, cherry tomatoes, and cheese.
- 27. Bake the pizza for about 10 to 12 minutes in the oven.
- 28. Carefully remove the pizza from the oven.
- 29. Sprinkle the pizza with the remaining fresh basil.
- 30. Cut the pizza into pieces and serve it.
