🍕 Crispy Margherita Pizza with Fresh Arugula Pesto

Ingredients
- yeast, fresh 0.5 pcs
- water 300 ml
- sugar pinch
- whole wheat flour 400 g
- spelt flour, type 630 100 g
- olive oil 9 tbsp
- salt 1 tsp
- mozzarella 2 pcs
- onions, red 1 pcs
- garlic cloves 2 pcs
- arugula 50 g
- pepper, black ground pinch
- tomatoes, pureed 400 g
- oregano, dried 1 tsp
Instructions
- 1. Dissolve the yeast in lukewarm water and the sugar.
- 2. Let the yeast mixture rest covered for about 10 minutes.
- 3. Add whole grain flour, spelt flour, 2 tablespoons of olive oil, and 1 teaspoon of salt to the yeast water.
- 4. Knead everything into a smooth dough.
- 5. Let the dough rise in a warm place covered for about 1 hour until it has doubled in size.
- 6. Preheat the oven to 250 degrees Celsius with top and bottom heat.
- 7. Drain the mozzarella and slice it.
- 8. Halve the onion, peel it, and cut it into thin strips.
- 9. Peel the garlic and chop it finely.
- 10. Wash the arugula and shake it dry.
- 11. Put half of the chopped garlic and 6 tablespoons of olive oil into a tall container.
- 12. Puree the arugula together with the garlic and oil until smooth.
- 13. Season the pesto with salt and pepper and adjust the taste.
- 14. Heat 1 tablespoon of olive oil in a pot over medium heat.
- 15. Fry the remaining garlic in it for about 2 minutes.
- 16. Deglaze the pot with pureed tomatoes.
- 17. Let the sauce simmer briefly.
- 18. Season the tomato sauce with salt, pepper, sugar, and oregano.
- 19. Knead the dough briefly again on a little flour.
- 20. Divide the dough into 4 equal portions.
- 21. Roll the portions into round pizzas.
- 22. Place the pizzas on baking sheets lined with baking paper.
- 23. Spread the tomato sauce over the pizzas.
- 24. Distribute the mozzarella and onion strips as desired on top.
- 25. Bake the pizzas on the lowest rack in the oven for about 10 minutes until golden brown and crispy.
- 26. Take the finished pizza out of the oven.
- 27. Garnish the pizza with the arugula pesto and serve it.
