  1. 1. Dissolve the yeast in lukewarm water and the sugar.
  2. 2. Let the yeast mixture rest covered for about 10 minutes.
  3. 3. Add whole grain flour, spelt flour, 2 tablespoons of olive oil, and 1 teaspoon of salt to the yeast water.
  4. 4. Knead everything into a smooth dough.
  5. 5. Let the dough rise in a warm place covered for about 1 hour until it has doubled in size.
  6. 6. Preheat the oven to 250 degrees Celsius with top and bottom heat.
  7. 7. Drain the mozzarella and slice it.
  8. 8. Halve the onion, peel it, and cut it into thin strips.
  9. 9. Peel the garlic and chop it finely.
  10. 10. Wash the arugula and shake it dry.
  11. 11. Put half of the chopped garlic and 6 tablespoons of olive oil into a tall container.
  12. 12. Puree the arugula together with the garlic and oil until smooth.
  13. 13. Season the pesto with salt and pepper and adjust the taste.
  14. 14. Heat 1 tablespoon of olive oil in a pot over medium heat.
  15. 15. Fry the remaining garlic in it for about 2 minutes.
  16. 16. Deglaze the pot with pureed tomatoes.
  17. 17. Let the sauce simmer briefly.
  18. 18. Season the tomato sauce with salt, pepper, sugar, and oregano.
  19. 19. Knead the dough briefly again on a little flour.
  20. 20. Divide the dough into 4 equal portions.
  21. 21. Roll the portions into round pizzas.
  22. 22. Place the pizzas on baking sheets lined with baking paper.
