  1. 1. Crumble the yeast into a bowl with 40 ml of lukewarm water.
  2. 2. Add the sugar and mix everything well.
  3. 3. Let the mixture rest for about 10 minutes.
  4. 4. Mix the flour with the salt in a separate bowl.
  5. 5. Pour the yeast-water mixture and the oil into the flour mixture.
  6. 6. Knead the dough until it is smooth and elastic.
  7. 7. Work in about 200 ml of lukewarm water gradually.
  8. 8. Cover the dough and let it rise for about 1 hour in a warm, draft-free place.
  9. 9. Peel the onion and garlic and dice them finely.
  10. 10. Heat 1 tbsp of oil in a pot.
  11. 11. Sauté the onions and garlic for about 3 minutes until translucent.
  12. 12. Add the tomatoes including their juice to the pot.
  13. 13. Season the sauce with oregano, salt, pepper, and sugar.
  14. 14. Simmer the sauce for 15–20 minutes, stirring occasionally.
  15. 15. Mash the tomatoes with a cooking spoon while cooking.
  16. 16. Preheat the oven to 225 °C (top/bottom heat).
  17. 17. Wash the basil and pat it dry.
  18. 18. Pluck the basil leaves off the stems.
  19. 19. Drain the mozzarella.
  20. 20. Slice the mozzarella into thin slices.
  21. 21. Divide the dough into four parts.
  22. 22. Sprinkle some flour on the work surface.
  23. 23. Roll out four circles, each about 24 cm in diameter.
  24. 24. Make sure the edge remains slightly thicker.
  25. 25. Place two pizzas on a tray lined with baking paper.
  26. 26. Spread some tomato sauce on the pizzas.
  27. 27. Distribute the mozzarella slices on top.
  28. 28. Bake the pizzas in the preheated oven for about 15 minutes until crispy.
  29. 29. Remove the finished pizzas from the oven.
  30. 30. Serve them hot with basil and freshly ground pepper.
  31. 31. Prepare the remaining pizzas in the same way.
  32. 32. Bake the remaining pizzas as well.
