  1. 1. Preheat the oven to 220 degrees Celsius with fan setting.
  2. 2. Place the pizza doughs on baking trays lined with baking paper.
  3. 3. Spread the tomato sauce evenly over the doughs.
  4. 4. Sprinkle the pizzas generously with Gouda cheese.
  5. 5. Bake the pizzas for 14 to 16 minutes.
  6. 6. Swap the position of the baking trays in the oven after 7 minutes.
  7. 7. Peel the garlic and chop it finely.
  8. 8. Wash the herbs and dry them thoroughly.
  9. 9. Remove any thick stems from the herbs.
  10. 10. Chop the herbs finely as well.
  11. 11. Rinse the lemon under hot water.
  12. 12. Grate about one teaspoon of the lemon zest.
  13. 13. Mix garlic, herbs, lemon zest, and four tablespoons of olive oil in a bowl.
  14. 14. Season the mixture with salt and pepper to taste.
  15. 15. Wipe the mushrooms with a kitchen towel if necessary.
  16. 16. Slice the mushrooms.
  17. 17. Heat one tablespoon of olive oil in a pan over medium heat.
  18. 18. Fry the mushroom slices for about five minutes.
  19. 19. Season the mushrooms with salt and pepper.
  20. 20. Take the pizza out of the oven.
  21. 21. Top the pizza with the fried mushrooms.
  22. 22. Add the gremolata to the pizza as desired.
