Ingredients
- milk 150 ml
- yeast, fresh 0.5 pcs
- sugar 0.5 tsp
- butter 2 tbsp
- wheat flour, Type 405 250 g
- eggs 3 pcs
- salt pinch
- quark 20 % fat in dry matter 250 g
- chives, fresh 1 bunch
- pepper, black ground pinch
- cumin 1 tsp
Instructions
- 1. Warm the milk in a pot over low heat.
- 2. Crumble the yeast into a bowl.
- 3. Add the sugar and the lukewarm milk to the yeast.
- 4. Let the mixture rest for about 10 minutes.
- 5. Melt the butter in a frying pan over low heat.
- 6. Add the flour, two eggs, and salt to a large bowl.
- 7. Mix the ingredients with a dough hook to form a smooth dough.
- 8. Knead the melted butter into the dough.
- 9. Cover the dough and let it rise in a warm place for about 30 minutes.
- 10. Squeeze the quark cheese thoroughly in a clean kitchen towel.
- 11. Wash the chives and pat them dry.
- 12. Cut the chives into fine rings.
- 13. Separate an egg and set the egg white and yolk aside separately.
- 14. Mix the quark, chives, and egg yolk in a bowl.
- 15. Season the filling with salt, pepper, and cumin.
- 16. Preheat the oven to 190 degrees Celsius with top and bottom heat.
- 17. Knead the dough once more briefly.
- 18. Roll out the dough on a floured surface to a thickness of about 3 millimeters.
- 19. Cut circles with a diameter of about 10 centimeters from the dough.
- 20. Place one teaspoon of quark filling in the center of each dough circle.
- 21. Brush the edges of the dough circles with the egg white.
- 22. Fold the dough circles into half-moons.
- 23. Press the edges firmly together to seal them.
- 24. Place the piroshki on a baking sheet lined with baking paper.
- 25. Brush the surface of the piroshki with the remaining egg white.
- 26. Bake the piroshki for about 20 minutes until golden brown.
