  5. 5. Melt the butter in a frying pan over low heat.
  6. 6. Add the flour, two eggs, and salt to a large bowl.
  7. 7. Mix the ingredients with a dough hook to form a smooth dough.
  8. 8. Knead the melted butter into the dough.
  9. 9. Cover the dough and let it rise in a warm place for about 30 minutes.
  10. 10. Squeeze the quark cheese thoroughly in a clean kitchen towel.
  11. 11. Wash the chives and pat them dry.
  12. 12. Cut the chives into fine rings.
  13. 13. Separate an egg and set the egg white and yolk aside separately.
  14. 14. Mix the quark, chives, and egg yolk in a bowl.
  15. 15. Season the filling with salt, pepper, and cumin.
  16. 16. Preheat the oven to 190 degrees Celsius with top and bottom heat.
  17. 17. Knead the dough once more briefly.
  18. 18. Roll out the dough on a floured surface to a thickness of about 3 millimeters.
  19. 19. Cut circles with a diameter of about 10 centimeters from the dough.
  20. 20. Place one teaspoon of quark filling in the center of each dough circle.

  24. 24. Place the piroshki on a baking sheet lined with baking paper.
  25. 25. Brush the surface of the piroshki with the remaining egg white.
  26. 26. Bake the piroshki for about 20 minutes until golden brown.
