  2. 2. Finely grate about two tablespoons of the peel.
  3. 3. Carefully peel two grapefruits with a sharp knife.
  4. 4. Remove the white inner skin completely.
  5. 5. Cut the fruit pieces out of the membranes with V-shaped cuts.
  6. 6. Catch the juice that flows out.
  7. 7. Squeeze the remaining fruit pulp well.
  8. 8. Halve the remaining grapefruits.
  9. 9. Squeeze them.
  10. 10. Ensure you have a total of 700 milliliters of juice.
  11. 11. Supplement the juice with water if necessary.
  12. 12. Slice a vanilla pod lengthwise.
  13. 13. Scrape out the pulp with the tip of a knife.
  14. 14. Put the grapefruit juice, fruit pieces, and grated peel into a pot.
  15. 15. Add jam sugar, star anise, the vanilla pulp, and the pod.
  16. 16. Mix everything well.
  17. 17. Bring the mixture to a boil over medium heat.
  18. 18. Let the jam boil vigorously for about four minutes.
  19. 19. Remove the vanilla pod and star anise.
  20. 20. Fill the jam immediately into four jars with a capacity of 250 milliliters each.
