🍳 Tropical Pineapple Coconut Jam

Ingredients
- Pineapple 500 g
- Sugar with pectin 250 g
- white rum 4 tbsp
- coconut milk 100 ml
- coconut flakes 10 g
Instructions
- 1. Cut the pineapple in half and remove the hard core.
- 2. Dice the fruit flesh into small cubes.
- 3. Add the pineapple pieces, jam sugar, rum, coconut milk, and coconut flakes to a pot.
- 4. Heat the mixture on medium heat until it starts to boil.
- 5. Let the jam simmer gently for about 4 minutes.
- 6. Drop a teaspoon of the warm jam onto a cold plate.
- 7. Wait about 1 minute and check if the jam sets.
- 8. If it is still liquid, cook for another 1 to 2 minutes and repeat the test.
- 9. Fill the hot jam immediately into three clean screw-top jars (250 ml each).
- 10. Seal the jars tightly with the lids.
- 11. Turn the jars upside down to let them cool.
