  1. 1. Cut the pineapple in half and remove the hard core.
  2. 2. Dice the fruit flesh into small cubes.
  3. 3. Add the pineapple pieces, jam sugar, rum, coconut milk, and coconut flakes to a pot.
  4. 4. Heat the mixture on medium heat until it starts to boil.
  5. 5. Let the jam simmer gently for about 4 minutes.
  6. 6. Drop a teaspoon of the warm jam onto a cold plate.
  7. 7. Wait about 1 minute and check if the jam sets.
  8. 8. If it is still liquid, cook for another 1 to 2 minutes and repeat the test.
  9. 9. Fill the hot jam immediately into three clean screw-top jars (250 ml each).
  10. 10. Seal the jars tightly with the lids.
  11. 11. Turn the jars upside down to let them cool.
