🍽️ Mushroom Skewers Stuffed with Goat Cheese

Ingredients
- white button mushrooms 500 g
- garlic cloves 1 pcs
- parsley, fresh 20 g
- spring onions 1 bunch
- almonds, whole 50 g
- fresh goat cheese 150 g
- salt pinch
- pepper, black ground pinch
- olive oil 1 tbsp
Instructions
- 1. Gently clean the mushrooms with a kitchen towel and remove the stems.
- 2. Peel the garlic and dice it finely.
- 3. Rinse the parsley, pat it dry, and pick the leaves off the stems.
- 4. Chop the parsley leaves finely.
- 5. Trim the roots from the spring onions and cut them into pieces about 3 cm long.
- 6. Roughly chop the almonds.
- 7. In a bowl, mix the almonds, goat cheese, parsley, and garlic together.
- 8. Season the mixture with salt and pepper to taste.
- 9. Fill the mushroom caps with the cheese mixture.
- 10. Soak the wooden skewers in cold water.
- 11. Thread the stuffed mushrooms onto the skewers in pairs.
- 12. Lightly salt the mushrooms.
- 13. Alternate with the spring onions and skewer them as well.
- 14. Place the skewers on an aluminum foil grilling tray.
- 15. Grill the skewers on the hot charcoal grill for 5 to 8 minutes, turning them around.
- 16. Brush the skewers with oil several times during grilling.
- 17. Serve the grilled mushroom skewers immediately.
