  1. 1. Gently clean the mushrooms with a kitchen towel and remove the stems.
  2. 2. Peel the garlic and dice it finely.
  3. 3. Rinse the parsley, pat it dry, and pick the leaves off the stems.
  4. 4. Chop the parsley leaves finely.
  5. 5. Trim the roots from the spring onions and cut them into pieces about 3 cm long.
  6. 6. Roughly chop the almonds.
  7. 7. In a bowl, mix the almonds, goat cheese, parsley, and garlic together.
  8. 8. Season the mixture with salt and pepper to taste.
  9. 9. Fill the mushroom caps with the cheese mixture.
  10. 10. Soak the wooden skewers in cold water.
  11. 11. Thread the stuffed mushrooms onto the skewers in pairs.
  12. 12. Lightly salt the mushrooms.
  13. 13. Alternate with the spring onions and skewer them as well.
  14. 14. Place the skewers on an aluminum foil grilling tray.
  15. 15. Grill the skewers on the hot charcoal grill for 5 to 8 minutes, turning them around.
  16. 16. Brush the skewers with oil several times during grilling.
  17. 17. Serve the grilled mushroom skewers immediately.
