  2. 2. Place the potato cubes in a pot with salted water.
  3. 3. Bring the water to a boil and cook the potatoes on medium heat for about 20 minutes until tender.
  4. 4. Cut the onion in half, peel it, and dice it finely.
  5. 5. Clean the mushrooms if necessary with a kitchen towel and cut them into fine cubes.
  6. 6. Wash the parsley, shake off excess water, and remove the thick stems.
  7. 7. Finely chop the parsley.
  8. 8. Heat 2 tablespoons of oil in a large frying pan over high heat.
  9. 9. Fry the mushrooms in it for about 5 minutes over high heat.
  10. 10. Wait until the liquid released by the mushrooms has completely evaporated.
  11. 11. Add the diced onion and chopped parsley to the pan.
  12. 12. Sauté the vegetables for about 1 minute.
  13. 13. Season the mixture with salt and pepper.
