🍽️ Fried Mushroom Patties with Apple Sauce and Mashed Potatoes

Ingredients
- potatoes, floury 1 kg
- salt pinch
- onions, red 1 pc.
- mushrooms, white 200 g
- parsley, fresh 15 g
- oil 6 tbsp
- pepper, black ground pinch
- Vemondo vegan mince 550 g
- Vemondo Grating Delight 100 g
- breadcrumbs 50 g
- oat drink 200 ml
- nutmeg, ground pinch
- margarine, vegan 80 g
- apple sauce 80 g
Instructions
- 1. Peel the potatoes and cut them into small cubes.
- 2. Place the potato cubes in a pot with salted water.
- 3. Bring the water to a boil and cook the potatoes on medium heat for about 20 minutes until tender.
- 4. Cut the onion in half, peel it, and dice it finely.
- 5. Clean the mushrooms if necessary with a kitchen towel and cut them into fine cubes.
- 6. Wash the parsley, shake off excess water, and remove the thick stems.
- 7. Finely chop the parsley.
- 8. Heat 2 tablespoons of oil in a large frying pan over high heat.
- 9. Fry the mushrooms in it for about 5 minutes over high heat.
- 10. Wait until the liquid released by the mushrooms has completely evaporated.
- 11. Add the diced onion and chopped parsley to the pan.
- 12. Sauté the vegetables for about 1 minute.
- 13. Season the mixture with salt and pepper.
- 14. Remove the pan from the heat.
- 15. Place the fried mushroom mixture, the vegan mince, the grated vegetable mix, and the breadcrumbs into a bowl.
- 16. Mix all ingredients thoroughly together.
- 17. Shape the mixture into small balls or patties.
- 18. Heat 4 tablespoons of oil in another frying pan over medium to high heat.
- 19. Fry the mushroom patties for about 4 minutes on each side until crispy.
- 20. Warm the oat drink in a separate pot.
- 21. Drain the cooked potatoes, but leave them in the pot.
- 22. Mash the potatoes into a smooth puree using a potato masher.
- 23. Stir nutmeg, margarine, and salt into the mashed potatoes.
- 24. Plate the mashed potatoes, mushroom patties, and apple sauce.
