🍽️ Spicy Chicken Breast with Marinated Kohlrabi, Fried Sweet Potato Slices and Coriander Dip

Ingredients
- chicken breast fillets 600 g
- organic limes 1 pc.
- olive oil 3 tbsp
- salt pinch
- sweet potatoes 2 pc.
- kohlrabi 2 pc.
- oil 2 tbsp
- honey 1 tsp
- snap peas 100 g
- coriander, fresh 20 g
- cream cheese, grainy 200 g
- pepper, black ground pinch
- sugar pinch
Instructions
- 1. Rinse the chicken breast fillets under cold water.
- 2. Pat the meat completely dry with kitchen paper.
- 3. Halve the lime and squeeze out the juice.
- 4. Mix 1 teaspoon of lime juice with 1 tablespoon of olive oil and a pinch of salt in a bowl.
- 5. Rub the chicken meat with this marinade.
- 6. Set the meat aside to marinate.
- 7. Wash the sweet potatoes thoroughly.
- 8. Cut the sweet potatoes lengthwise into slices about 1 centimeter thick.
- 9. Lightly salt the slices.
- 10. Preheat the oven to 90 degrees Celsius (convection mode).
- 11. Heat 1 tablespoon of oil in a frying pan over medium heat.
- 12. Fry the sweet potato slices in it for about 5 minutes.
- 13. Turn the slices until they are golden brown on both sides.
- 14. Wrap the fried slices in aluminum foil.
- 15. Place the foil packets in the oven to keep them warm.
- 16. Clean the frying pan thoroughly.
- 17. Heat 1 tablespoon of oil in the pan over high heat.
- 18. Fry the chicken meat for about 4 minutes on all sides.
- 19. Wrap the browned meat in aluminum foil as well.
- 20. Place the meat in the oven for 10 minutes.
- 21. Remove the meat and let it rest.
- 22. Bring about 2 liters of salted water to a boil in a pot.
- 23. Peel the kohlrabi in the meantime.
- 24. Remove any woody parts from the kohlrabi.
- 25. Cut the kohlrabi into wedges.
- 26. Halve the wedges crosswise.
- 27. Cook the kohlrabi pieces in the boiling salted water for 7 minutes.
- 28. The cooking time should be such that the kohlrabi is still al dente (firm to the bite).
- 29. Mix 1 teaspoon of lime juice with 1 teaspoon of honey in the prepared bowl.
- 30. Add a pinch of salt.
- 31. Stir 2 tablespoons of olive oil into the mixture.
- 32. Drain the kohlrabi.
- 33. Add the hot kohlrabi directly to the bowl with the marinade.
- 34. Mix the kohlrabi well with the lime marinade.
- 35. Let the vegetables marinate for 5 minutes.
- 36. Wash the snow peas.
- 37. Shake the snow peas dry.
- 38. Cut the snow peas lengthwise into thin strips.
- 39. Add the snow pea strips to the kohlrabi.
- 40. Rinse the coriander.
- 41. Shake the coriander dry.
- 42. Roughly pick the coriander leaves off the stems.
- 43. Finely chop the coriander leaves.
- 44. Mix the cream cheese with the chopped coriander.
- 45. Add the remaining lime juice to the dip.
- 46. Season the dip with salt, pepper, and sugar.
- 47. Plate the chicken.
- 48. Serve the chicken together with the coriander dip.
- 49. Add the marinated kohlrabi vegetables.
