  1. 1. Pour lukewarm water into a bowl.
  2. 2. Crumble the yeast into the water and stir in the sugar until dissolved.
  3. 3. Let the mixture rest covered for about 10 minutes.
  4. 4. Add flour, salt, eggs, and one tablespoon of olive oil to a separate bowl.
  5. 5. Knead everything into a smooth dough.
  6. 6. Let the dough rise for one hour.
  7. 7. Halve and peel the onions.
  8. 8. Dice the onions into small cubes.
  9. 9. Wash the apples.
  10. 10. Quarter the apples and remove the core.
  11. 11. Dice the apples as well.
  12. 12. Halve a lemon.
  13. 13. Squeeze the juice from the lemon.
  14. 14. Roughly chop the walnuts.
  15. 15. Cut the goat cheese into coarse pieces.
  16. 16. Heat two tablespoons of olive oil in a pan over high heat.
  17. 17. Sweat the onions for about one minute.
  18. 18. Add the apples and walnuts to the pan.
  19. 19. Season the mixture with mustard, lemon juice, salt, pepper, and oregano.
  20. 20. Mix the ingredients well together.
  21. 21. Preheat the oven to 200 °C (convection mode).
  22. 22. Divide the dough into four equal pieces.
  23. 23. Roll out each piece into an oval shape, but keep it not too thin.
  24. 24. Distribute the apple and walnut mixture over the dough.
  25. 25. Place the goat cheese pieces evenly on top.
  26. 26. Leave a border of about two centimeters free.
  27. 27. Fold the long sides of the dough over.
  28. 28. Press the ends at the top and bottom firmly to create a boat shape.
  29. 29. Bake the pide in the oven for about 30 minutes.
  30. 30. Remove the pide from the oven when they are golden brown.
  31. 31. Brush the edges with a little butter.
  32. 32. Enjoy the pide warm.
