🍽️ Goat Cheese, Apple and Walnut Pide

Ingredients
- water 150 ml
- yeast, fresh 0.25 pcs
- sugar 1 tbsp
- wheat flour, Type 405 300 g
- salt pinch
- eggs 1 pcs
- olive oil 3 tbsp
- onions, yellow 1 pcs
- apples, red 3 pcs
- lemons 1 pcs
- walnut kernels 4 tbsp
- goat cheese roll 200 g
- mustard 1 tsp
- pepper, black ground pinch
- oregano, dried 1 tsp
- butter 1 tbsp
Instructions
- 1. Pour lukewarm water into a bowl.
- 2. Crumble the yeast into the water and stir in the sugar until dissolved.
- 3. Let the mixture rest covered for about 10 minutes.
- 4. Add flour, salt, eggs, and one tablespoon of olive oil to a separate bowl.
- 5. Knead everything into a smooth dough.
- 6. Let the dough rise for one hour.
- 7. Halve and peel the onions.
- 8. Dice the onions into small cubes.
- 9. Wash the apples.
- 10. Quarter the apples and remove the core.
- 11. Dice the apples as well.
- 12. Halve a lemon.
- 13. Squeeze the juice from the lemon.
- 14. Roughly chop the walnuts.
- 15. Cut the goat cheese into coarse pieces.
- 16. Heat two tablespoons of olive oil in a pan over high heat.
- 17. Sweat the onions for about one minute.
- 18. Add the apples and walnuts to the pan.
- 19. Season the mixture with mustard, lemon juice, salt, pepper, and oregano.
- 20. Mix the ingredients well together.
- 21. Preheat the oven to 200 °C (convection mode).
- 22. Divide the dough into four equal pieces.
- 23. Roll out each piece into an oval shape, but keep it not too thin.
- 24. Distribute the apple and walnut mixture over the dough.
- 25. Place the goat cheese pieces evenly on top.
- 26. Leave a border of about two centimeters free.
- 27. Fold the long sides of the dough over.
- 28. Press the ends at the top and bottom firmly to create a boat shape.
- 29. Bake the pide in the oven for about 30 minutes.
- 30. Remove the pide from the oven when they are golden brown.
- 31. Brush the edges with a little butter.
- 32. Enjoy the pide warm.
