  1. 1. Crumble the yeast into a glass with lukewarm water and stir until dissolved.
  2. 2. Mix flour and salt in a large bowl.
  3. 3. Add the yeast-water mixture and olive oil to the flour mixture.
  4. 4. Knead the ingredients vigorously until a smooth dough forms.
  5. 5. Cover the bowl and let the dough rise in a warm place for about 60 minutes.
  6. 6. Halve the onion, peel it, and cut it into small cubes.
  7. 7. Peel the garlic and chop it finely.
  8. 8. Wash the spinach and let it drain well.
  9. 9. Crumble the feta into small pieces using your hands.
  10. 10. Wash the dill, shake it dry, and remove the thick stems.
  11. 11. Finely chop the dill.
  12. 12. Heat oil in a pan over high heat.
  13. 13. Sauté the onion cubes and garlic for about 2 minutes.
  14. 14. Add the spinach to the pan and let it wilt for about 3 minutes.
  15. 15. Season the mixture with salt and pepper.
  16. 16. Remove the pan from the heat.
  17. 17. Stir in the feta, dill, raisins, and pine nuts into the spinach mixture.
  18. 18. Preheat the oven to 220 °C convection.
  19. 19. Divide the dough into four equal parts.
  20. 20. Dust some flour on the work surface.
  21. 21. Roll each dough part into an oval shape (approx. 16 x 26 cm).
  22. 22. Place two of the flatbreads on a baking sheet lined with parchment paper.
  23. 23. Distribute the filling in the center of the flatbreads.
  24. 24. Fold the dough edges slightly over the filling.
  25. 25. Press the ends of the flatbreads firmly together.
  26. 26. Whisk the egg yolk.
  27. 27. Brush the dough edges with the whisked egg yolk.
  28. 28. Sprinkle sesame seeds over the flatbreads.
  29. 29. Bake the flatbreads one after another in the oven for about 20 minutes until golden brown.
