🍽️ Crispy Pide Flatbreads with Spinach Filling

Ingredients
- yeast, fresh 0.5 pcs
- water 350 ml
- wheat flour, Type 405 500 g
- salt pinch
- olive oil 30 ml
- onions, yellow 1 pcs
- garlic cloves 2 pcs
- leaf spinach 500 g
- feta 100 g
- dill, fresh 20 g
- oil 2 tbsp
- pepper, black ground pinch
- raisins 20 g
- pine nuts 20 g
- eggs 1 pcs
- sesame, white 50 g
Instructions
- 1. Crumble the yeast into a glass with lukewarm water and stir until dissolved.
- 2. Mix flour and salt in a large bowl.
- 3. Add the yeast-water mixture and olive oil to the flour mixture.
- 4. Knead the ingredients vigorously until a smooth dough forms.
- 5. Cover the bowl and let the dough rise in a warm place for about 60 minutes.
- 6. Halve the onion, peel it, and cut it into small cubes.
- 7. Peel the garlic and chop it finely.
- 8. Wash the spinach and let it drain well.
- 9. Crumble the feta into small pieces using your hands.
- 10. Wash the dill, shake it dry, and remove the thick stems.
- 11. Finely chop the dill.
- 12. Heat oil in a pan over high heat.
- 13. Sauté the onion cubes and garlic for about 2 minutes.
- 14. Add the spinach to the pan and let it wilt for about 3 minutes.
- 15. Season the mixture with salt and pepper.
- 16. Remove the pan from the heat.
- 17. Stir in the feta, dill, raisins, and pine nuts into the spinach mixture.
- 18. Preheat the oven to 220 °C convection.
- 19. Divide the dough into four equal parts.
- 20. Dust some flour on the work surface.
- 21. Roll each dough part into an oval shape (approx. 16 x 26 cm).
- 22. Place two of the flatbreads on a baking sheet lined with parchment paper.
- 23. Distribute the filling in the center of the flatbreads.
- 24. Fold the dough edges slightly over the filling.
- 25. Press the ends of the flatbreads firmly together.
- 26. Whisk the egg yolk.
- 27. Brush the dough edges with the whisked egg yolk.
- 28. Sprinkle sesame seeds over the flatbreads.
- 29. Bake the flatbreads one after another in the oven for about 20 minutes until golden brown.
