🍽️ Fresh Picnic Tacos with Crispy Radishes and Mango Yogurt Dip

Ingredients
- lemons 1 pc.
- radishes 70 g
- pears 1 pc.
- chickpeas from the can 60 g
- red cabbage, fresh 100 g
- cilantro, fresh 20 g
- oil 2 tbsp
- vegan gyros 150 g
- salt pinch
- pepper, black ground pinch
- mango 100 g
- mustard 2 tbsp
- soy yogurt 5 tbsp
- wraps 4 pc.
Instructions
- 1. Cut the lemon in half and squeeze out the juice, then set it aside.
- 2. Thoroughly wash the radishes.
- 3. Trim off the hard ends from the radishes.
- 4. Slice the radishes into very thin rounds.
- 5. Thoroughly wash the pear.
- 6. Remove the core from the pear.
- 7. Dice the pear flesh into small cubes.
- 8. Drain the chickpeas in a colander.
- 9. Rinse the chickpeas under running water.
- 10. Thoroughly wash the red cabbage.
- 11. Remove any wilted or unappealing leaves from the red cabbage.
- 12. Shred the red cabbage into thin strips.
- 13. Thoroughly wash the coriander (cilantro).
- 14. Shake the coriander dry to remove excess water.
- 15. Roughly chop the coriander.
- 16. Place the sliced radishes into a large bowl.
- 17. Add the diced pear to the bowl.
- 18. Add the drained chickpeas to the bowl.
- 19. Add the shredded red cabbage to the bowl.
- 20. Add the chopped coriander to the bowl.
- 21. Mix all the ingredients in the bowl thoroughly.
- 22. Pour some oil into a frying pan.
- 23. Heat the oil over medium heat.
- 24. Fry the vegan gyros meat for about 4 to 5 minutes.
- 25. Season the fried gyros with salt.
- 26. Season the gyros with black pepper.
- 27. Add a splash of lemon juice to the gyros.
- 28. Peel the mango.
- 29. Separate the mango flesh from the skin.
- 30. Dice the mango flesh into cubes.
- 31. Place the mango cubes into a container.
- 32. Add the mustard to the mango container.
- 33. Add the soy yogurt to the mango container.
- 34. Season the dressing mixture with a little salt.
- 35. Season the dressing mixture with black pepper.
- 36. Blend all dressing ingredients until smooth using a hand blender.
- 37. Spread the mango dressing evenly over the wraps.
- 38. Top the wraps with the prepared radish vegetable mixture.
- 39. Top the tacos with the fried vegan gyros.
- 40. Drizzle fresh lemon juice over the finished tacos to taste.
- 41. Serve the tacos immediately and enjoy.
