  3. 3. Trim off the hard ends from the radishes.
  4. 4. Slice the radishes into very thin rounds.
  5. 5. Thoroughly wash the pear.
  6. 6. Remove the core from the pear.
  7. 7. Dice the pear flesh into small cubes.
  8. 8. Drain the chickpeas in a colander.
  9. 9. Rinse the chickpeas under running water.
  10. 10. Thoroughly wash the red cabbage.
  11. 11. Remove any wilted or unappealing leaves from the red cabbage.
  12. 12. Shred the red cabbage into thin strips.
  13. 13. Thoroughly wash the coriander (cilantro).
  14. 14. Shake the coriander dry to remove excess water.
  15. 15. Roughly chop the coriander.
  16. 16. Place the sliced radishes into a large bowl.
  17. 17. Add the diced pear to the bowl.
  18. 18. Add the drained chickpeas to the bowl.
  19. 19. Add the shredded red cabbage to the bowl.
  20. 20. Add the chopped coriander to the bowl.
  21. 21. Mix all the ingredients in the bowl thoroughly.
  22. 22. Pour some oil into a frying pan.
  23. 23. Heat the oil over medium heat.
  24. 24. Fry the vegan gyros meat for about 4 to 5 minutes.
  25. 25. Season the fried gyros with salt.
  26. 26. Season the gyros with black pepper.
  27. 27. Add a splash of lemon juice to the gyros.
  28. 28. Peel the mango.
  29. 29. Separate the mango flesh from the skin.
  30. 30. Dice the mango flesh into cubes.
  31. 31. Place the mango cubes into a container.
  32. 32. Add the mustard to the mango container.
  33. 33. Add the soy yogurt to the mango container.
  34. 34. Season the dressing mixture with a little salt.
  35. 35. Season the dressing mixture with black pepper.
  36. 36. Blend all dressing ingredients until smooth using a hand blender.
  37. 37. Spread the mango dressing evenly over the wraps.
  38. 38. Top the wraps with the prepared radish vegetable mixture.
  39. 39. Top the tacos with the fried vegan gyros.
  40. 40. Drizzle fresh lemon juice over the finished tacos to taste.
  41. 41. Serve the tacos immediately and enjoy.
