  1. 1. Wash the plums thoroughly, halve them, remove the pits, and cut into small pieces. In a pot, bring the plums together with red wine, apple juice, 80 g sugar, and ½ tsp cinnamon to a boil over medium heat, then simmer covered for about 25 minutes until soft.
  2. 2. Meanwhile, in another pot, heat milk, butter, 2 tsp sugar, vanilla sugar, and a pinch of salt on high heat. Remove from the stove and sprinkle in the durum wheat semolina while stirring constantly. Then transfer to a bowl and stir in the egg with a whisk.
  3. 3. In a large pot, bring about 3 liters of salted water to a boil. Using two teaspoons, form small dumplings from the semolina mixture and let them cook in the bubbling water for about 5 minutes.
  4. 4. Taste the plum compote and add more sugar if necessary. Drain the semolina dumplings on kitchen paper, then serve on top of the compote and dust with cinnamon. Enjoy!
