Ingredients
- Plums 2 kg
- Leaf gelatin 4 pcs
- Dry white wine 500 ml
- Water 500 ml
- Sugar 350 g
- Vanilla sugar 100 g
- Amaretto 40 ml
Instructions
- 1. Wash the plums thoroughly under running water.
- 2. Halve the plums and remove the pits.
- 3. Rinse the jam jars with hot water.
- 4. Pack the plums tightly into the prepared jars.
- 5. Soak the gelatin leaves in a bowl of cold water.
- 6. Preheat the oven to 160 degrees Celsius with top and bottom heat.
- 7. Put white wine, water, sugar, and vanilla sugar into a pot.
- 8. Heat the mixture at medium temperature for about five minutes.
- 9. Stir until the sugar has completely dissolved.
- 10. Squeeze the soaked gelatin leaves well.
- 11. Add the gelatin to the hot liquid.
- 12. Stir until the gelatin is completely dissolved.
- 13. Stir the Amaretto liqueur into the mixture.
- 14. Pour the hot liquid over the plums in the jars.
- 15. Close the jars with the lids.
- 16. Place the jars in a baking dish.
- 17. Pour about one liter of hot water into the baking dish.
- 18. Place the dish on the lowest rack in the oven.
- 19. Bake the compote for about 40 minutes.
- 20. Let the jars stand in the hot oven for another 30 minutes after baking.
- 21. Carefully remove the jars from the oven.
- 22. Let the jars cool down completely.
- 23. Check the lids for tightness.
- 24. Store only tightly sealed jars at room temperature.
- 25. Keep open jars in the refrigerator and consume them quickly.
