🍰 Plum Dumplings with Honey Nut Cream

Ingredients
- potatoes, mainly waxy 700 g
- eggs 2 pcs.
- wheat flour, Type 405 60 g
- cornstarch 60 g
- sugar 75 g
- vanilla sugar 30 g
- plums 500 g
- salt pinch
- hazelnut kernels, whole 50 g
- whipping cream 200 g
- honey 1 tbsp
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place them in a pot and cover with water.
- 3. Bring the water to a boil.
- 4. Cook the potatoes for about 25 minutes until tender.
- 5. Drain the water.
- 6. Let the potatoes steam dry for a moment.
- 7. Peel the potatoes while they are still hot.
- 8. Press the potatoes through a potato ricer.
- 9. Let the pressed potatoes cool down.
- 10. Separate the eggs.
- 11. Use the egg whites for something else.
- 12. Place the cooled potatoes in a bowl.
- 13. Add flour, starch, sugar, vanilla sugar, and 2 egg yolks.
- 14. Knead everything into a smooth dough.
- 15. Rinse the plums thoroughly.
- 16. Bring water to a boil in a large pot.
- 17. Season the water with salt and sugar.
- 18. Wrap each plum in the dough.
- 19. Lightly moisten your hands.
- 20. Shape the wrapped plums into dumplings.
- 21. Pit the plums beforehand if you wish.
- 22. Fill the pitted plums with a piece of cube sugar.
- 23. Place the dumplings into the boiling water.
- 24. Reduce the heat.
- 25. Let the water simmer gently.
- 26. Wait until the dumplings float to the surface.
- 27. Cook them for another 3 to 4 minutes.
- 28. Remove the dumplings with a slotted spoon.
- 29. Let the dumplings drain.
- 30. Finely chop the nuts.
- 31. Pour the cream into a tall container.
- 32. Add the honey.
- 33. Whip the cream until semi-stiff.
- 34. Stir the nuts into the cream.
- 35. Let the dumplings drain completely.
- 36. Serve the dumplings with the cream.
- 37. Enjoy your meal!
- 38. You can freeze the uncooked dumplings.
- 39. Place them on a plate or a tray lined with baking paper.
- 40. Freeze them.
- 41. Leave them in the freezer for 24 hours.
- 42. Transfer them into a freezer bag.
- 43. This prevents the dumplings from sticking together.
- 44. You can take them out portion by portion.
